After a refrigerated transport to Quinta de Nápoles, the grapes enter the cellar, where a full selection is made on a table of choice, and are pressed in an automatic press. After cold static decanting, the musts are cleaned in stainless steel vats, spontaneously fermenting at a controlled temperature. They age in their fine lees for 6 months, without lifting them. The White Dialogue is a good example of the Niepoort profile, austere and very mineral. In the cellar José de Sousa, some ancestral techniques of vinification are still not used, the most emblematic being the use of the carving in the fermentation of the grapes. It is a Alvarinho that leaves a specific selection of vineyards planted above 200 meters of altitude, revealing the minerality that relates the soil of granite origin of the terroir of Monção and Melgaço and the Alvarinho variety, improved with the batonage and the stage in the fine lees . The fermentation takes place in stainless steel tanks at a higher temperature than usual in white wines, showing an elegant and more mineral aroma with a dry and persistent finish. The Alvarinho grapes used in the Soalheiro Granit come from small-sized vineyards implanted in soil of granite origin above 200 meters altitude and located in the private microclimate of the Monção and Melgaço sub-region, the northernmost region of Portugal. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation in stainless steel tanks at a higher temperature than usual, using pre-selected yeasts for this purpose. The bottling takes place after the batonage and the stage in the fine lees. Citrine yellow color, aroma with the profile restrained and elegant with mineral notes and dry finish.
