Grapes are harvested by hand. After pressing, before fermentation, the must is clarified. Fermentation takes place in a stainless steel tank at a low temperature and in two egg-shaped deposits in our innovation area, one stainless steel and the other cement, so that the final batch, due to the constant battonage in the fine lees, transmits complexity and taste persistence superior to what we normally find in this variety. An intense, elegant wine with volume. Beginning at the end of August, this harvest was the earliest ever harvested in Soalheiro, but it demonstrated an exceptional balance between the fruit and the acidity of the Alvarinhos of the unique terroir of Monção and Melgaço. Alvarinho grapes without late harvest were harvested in small capacity boxes and transported to the winery in a short period of time. The must obtained by pressing the whole grapes was decanted and fermented at low temperature. The fermentation took place in stainless steel until reaching the balance of sweetness and acidity intended and that dictated the final alcohol of this Soalheiro - 9%. Citrus and tropical notes of the Alvarinho variety with a balance of unusual acidity and sweetness.
