Quinta de Arcossó Arinto White

Mr. Amílcar chose to ferment this white wine, an Arinto from Quinta de Arcossó, directly in the Vidago region, 450 meters above sea level in Trás-os-Montes (Ribeira de Oura). He adopted a unique approach: 80% of the fermentation took place in stainless steel tanks with 'bâtonnage', while the remaining 20% was fermented in French oak barrels. After this process, this delicious Arinto was aged in bottles for 30 months.
Enhance the flavor of this white wine by decanting it for an hour before serving.
Quinta de Arcossó, located in Trás-os-Montes, is a wine project dedicated to artisanal wine production. Using a minimalist winemaking approach, inspired by ancient techniques dating back to Roman times, the farm produces distinctive wines known for their notable acidity, ripe fruit and robust tannins. These wines, aged over time, are produced in limited quantities due to the artisanal care dedicated to each bottle.
José de Sousa Puro Talha White

At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of the mulch in the fermentation of the grapes. The essence of woodcarving winemaking has changed little in more than two thousand years. In this process, the white grapes are slightly crushed by foot and manually destemmed on a ripanço table. Fermentation takes place, without stems, in pots with an average capacity of 1,600 liters at a temperature of around 28ºC, being controlled by watering the pots 4 times a day. Fermentation takes approximately 8 days, leaving the wine in contact with the masses. Aged in amphorae for a period of 4 to 10 months, depending on the vintage. During this period, a film of oil is placed to prevent oxidation. Amber color, aroma of dried fruits, especially hazelnut. Spices, evolved, white pepper, ripe kiwi, bread, liqueur, hay. Elegant, complex palate, good acidity with a dry finish. Long and persistent finish. Contains sulfites.

With grapes from the most typical Alentejo grape varieties produced in the sub-region of Borba, the label Cortiça wine was produced, a true ex-libris from the Adega de Borba. Coming from old vines, the grapes had a strict control in the evolution of the maturation, having been harvested in small quantities. In the Cellar, after the destemming and soft crushing of the grape, the alcoholic fermentation began, which lasted for about 10-15 days with the temperature controlled at 24ºC, for greater extraction of the aromas and fruity flavors of the grape. In order to increase the polyphenolic complexity, the tannins and the structure of the wine, it remained in the vat in a post-fermentative maceration process. The malolactic fermentation occurred later in stainless steel containers. To enhance and elevate its organoleptic characteristics, the wine aged 12 months in 3rd and 4th year barrels, French oak and exotic wood barrels. followed by a six-month bottling stage in the basement. Aroma fine and elegant, suggesting black fruits, compote and white chocolate.

Carm Reserva White

With the most modern technology and total temperature control we eliminated curls that were not in perfect condition, the grapes were vinified with total destemming, followed by soft crushing and skin maceration for about 12 hours. After this period over an inert atmosphere the press was pressed in a penumatic press, followed by a period of clarification of the must of 24 to 48 hours depending on the variety and maturity stage. Vinification in hyper-reduction, fermentation at 12ºC and transfer under controlled atmosphere. The wines were sucessively stamped in stainless steel and French oak barrels on bottonage until bottling. Contains Sulfites.

Fermentation and maceration take place in stainless steel barrels at a controlled temperature. 100% of the wine ages in French and American oak barrels for 8 to 10 months in excellent conditions of natural aging. Clean, deep and beautiful garnet color. Intense aromas of plums and cherries. A slight nuance of vanilla reflects the time required for the barrel to age, which does not interfere with its typicality. During tasting, the wine enters the palate with a true explosion of ripe fruit flavors, leaving in the end an expression of perfect structural harmony. Contains Sulfites.
