Hand-picked grapes, reception with total destemming and crushing immediately. Fermentation between 22-26ºC for 7 days with gentle maceration. Aging for 12 months in new French oak 1/3 and American 2/3 oak barrels. Very complex aroma where the notes of barrel harmoniously combine that add complexity to spices, black fruits, licorice and violets in a set that promises to improve in bottle year after year. Complexity, very concentrated aroma, vigorous and structured in the mouth with a thick texture. Contains sulfites.

Constructo Red is an authentic expression of the unique terroir of Penalva do Castelo, coming from vineyards with 35 years of history. This wine, meticulously composed of a balanced selection of 50% Touriga Nacional and 50% Alfrocheiro, reflects our conviction in the ability of these grape varieties to capture the essence of the granite and clayey soil of this region. Vinification is carefully adjusted to the different maturation states of each grape variety, including 40% whole bunch and prolonged macerations of at least 15 days, followed by aging in French oak barrels for 18 months. The grapes were vinified with total destemming, followed by soft crushing and skin maceration for about 12 hours. After this period in an inert atmosphere, pressing was carried out in a pneumatic press, followed by a period of clarification of the must, from 24 to 48 hours, depending on the variety and the state of maturation. The alcoholic fermentation took place at a controlled temperature between 12º and 14ºC. The wines aged in stainless steel on fine lees until bottling. A new wine from old strains. In terms of aroma, it is a very fresh wine, with citrus fruit, in harmony with light floral nuances and strong mineral notes typical of the Terroir. Contains sulfites.
Crasto Superior White

The grapes, coming from the Douro Superior, were transported in 22 kg boxes and subjected to rigorous sorting at the entrance to the winery. They were later de-stemmed and pressed. The pressed must was transferred to a stainless steel tank where it was kept at a temperature of 8ºC for 48 hours until it was decanted. Afterwards, the alcoholic fermentation started in a stainless steel tank and later the wine was transferred to French oak barrels where the fermentation ended at a temperature of 14ºC for a period of 45 days. Crasto Superior aged in French oak barrels, where it remained for 6 months, in the process of working fine lees “bâtonnage”, with the barrels resting on a rotating system that allows the lees to be lifted without incorporating oxygen. It has a pale lemon color, has an excellent freshness and minerality on the nose, well integrated with fresh citrus fruit notes. Evolves in the mouth in a captivating way to a wine of great seriousness, with a vibrant acidity and great volume, very fresh and mineral. A wine with a gastronomic profile that ends up seductive and with enormous persistence. Contains sulfites.
