The grapes of Touriga Nacional (red grapes) and Alvarinho are produced in the municipality of Melgaço in vineyards with a balance between the sugars and the perfect acids for the elaboration of sparkling wine. The vineyards are implanted in soil of granite origin between 100 and 200 meters of altitude. Melgaço, the northernmost region of Portugal, is protected by a set of mountains that allow an exemplary marriage between rainfall, temperature and the number of hours of sunshine required for a slow and balanced maturation for the production of quality sparkling wine. The Touriga Nacional grapes characterized by the low color intensity in our region together with the Alvarinho grape variety are the basis of this very light Sparkling Soalheiro Brut Rose. The Touriga Nacional caste complements the Alvarinho variety by providing mouth structure giving elegance and persistence. The wort resulting from this selection ferments the temperature controlled, obtaining the base wine for sparkling wine. This wine suffers, already in bottle, a second fermentation. After this stage of fermentation and stage, degorgement is carried out, an operation that allows the elimination of the existing yeasts in the bottle and the replacement of the provisional metal capsule by the definitive stopper typical of the sparkling wine. Features pink salmon, thin, persistent bubble. The aroma is elegant and delicate. The taste is persistent and very deep with a pleasing complexity. Contains sulfites.

The Arinto and Bical grapes were totally destemmed and immediately pressed in a pneumatic press. The tear wort was cooled and decanted at low temperatures for 24 hours. The fermentation took place in a stainless steel tank with a temperature control of about 16ºC, for 3 weeks. It aged only in stainless steel to preserve all the aromas of fresh fruit. The sparkling process followed the traditional bottle fermentation method, which took place in a cool cellar for nine months. Light straw color, aromas of green apple and tropical fruits. It has a citrus citricity, fine and elegant bubble. In the mouth it has good acidity, it is fresh and crunchy. Contains sulfites.
