100% Touriga Nacional grape variety. A special parcel in our Quinta do Ribeiro Santo. Harvest by hand. Total destemming and decanting at low temperatures for 24h. The first fermentation happened in a stainless steel vat. An in-tank batonnage was followed for 3 months. The second fermentation followed the traditional method of fermentation in bottle, which was held in a cool cellar for 24 months. Light and refined salmon color. Delicate and engaging aromas of apricot, some tangerine and slight toast. Lovely harmony between acidity and structure. Fine bubble offering complexity and freshness. Creamy body with incredible depth. Will age beautifully in bottle. Contain sulfites.

Soito Blanc de Noirs White
Vinification is classic, with the first fermentation in stainless steel at a controlled temperature of 16ºC. Crystalline appearance, showing a soft and captivating straw yellow color with greenish and sparkling reflections. Features an exquisite fine bubble persistence. It reveals good fineness and aromatic delicacy, with the presence of soft floral notes and white-fleshed fruit, in a unique and well-enhanced cut. It expresses a unique profile, with a crunchy and well-integrated mineral acidity, a delicate, fresh and lively mousse, with a very refined and refined style, with a very persistent finish. Contains sulfites.
Casa da Passarella O Fugitivo Baga Brut White
A concept for wines that happen. For unique conditions in unique years. Through constant restlessness, it defies all standards. They could be called "collection wines," but they are mostly wines to be found, and above all discovered. The tests on foaming were recaptured in the 30s and 40s of the last century, carried out by the late Dr. Mário Pato. Attempts have been made to reproduce in these bottles a legacy, left in the memories of Casa da Passarella. This sparkling wine was elaborated, as at the time, by the classical method and with the use of the Baga variety. Once again, it is respect for tradition to open new paths. Contains sulfites.
Casa de Santar Vinha dos Amores Blanc de Noirs White
Intense citrus color with abundant greenish tones. Aroma dry apricot, exotic woods, toasted cereal, toasted beans and vanilla. In the mouth it is complex, elegant, harmonious and with long persistence. Crushing with total destemming, soft pneumatic pressing, where only the flôr wort was used. The clarification was natural and the alcoholic fermentation occurred at 18ºC. Sparkling by the classical method. Minimum 24 months in basement and 3 months in bottle. Contains sulfites.
