This sparkling wine is produced by the direct and soft pressing of fresh grapes from the Touriga Nacional and Rufete varietes. These grapes were harvested and selected in the vineyard – Vale de Escadinhas, was born from a prolonged fermentation at low temperature. Only 1800 bottles were produced. Contains sulfites.

In the nose it is rich, complex, insinuating notes of quince, cream of cassis, dried fruits and a notorious and charming toast. In the mouth, it assumes the freshness of the caste, the acidity, compensated with a wrapping mousse. It will be the most versatile of the sparkling Baga with the name Bairrada, because it combines a high gastronomic component with finesse and elegance that allows it to be a perfect companion for moments of leisure. 100% Touriga Nacional grape variety. A special parcel in our Quinta do Ribeiro Santo. Harvest by hand. Total destemming and decanting at low temperatures for 24h. The first fermentation happened in a stainless steel vat. An in-tank batonnage was followed for 3 months. The second fermentation followed the traditional method of fermentation in bottle, which was held in a cool cellar for 24 months. Light and refined salmon color. Delicate and engaging aromas of apricot, some tangerine and slight toast. Lovely harmony between acidity and structure. Fine bubble offering complexity and freshness. Creamy body with incredible depth. Will age beautifully in bottle. Contain sulfites.

The grapes of the base wine of this sparkling wine are harvested with a moderate potential alcoholic strength. The must is taken from the mill and fermented in old wooden barrels, where it is at rest. While stall is cleaned and bottled in the year following the vintage. It is a sparkling traditional method, fermented in bottle, with the remuage done by hand in wooden desks. Being a natural brute, it has no added sugar in the expedition liqueur. Contains sulfites.

The grapes of Touriga Nacional (red grapes) and Alvarinho are produced in the municipality of Melgaço in vineyards with a balance between the sugars and the perfect acids for the elaboration of sparkling wine. The vineyards are implanted in soil of granite origin between 100 and 200 meters of altitude. Melgaço, the northernmost region of Portugal, is protected by a set of mountains that allow an exemplary marriage between rainfall, temperature and the number of hours of sunshine required for a slow and balanced maturation for the production of quality sparkling wine. The Touriga Nacional grapes characterized by the low color intensity in our region together with the Alvarinho grape variety are the basis of this very light Sparkling Soalheiro Brut Rose. The Touriga Nacional caste complements the Alvarinho variety by providing mouth structure giving elegance and persistence. The wort resulting from this selection ferments the temperature controlled, obtaining the base wine for sparkling wine. This wine suffers, already in bottle, a second fermentation. After this stage of fermentation and stage, degorgement is carried out, an operation that allows the elimination of the existing yeasts in the bottle and the replacement of the provisional metal capsule by the definitive stopper typical of the sparkling wine. Features pink salmon, thin, persistent bubble. The aroma is elegant and delicate. The taste is persistent and very deep with a pleasing complexity. Contains sulfites.
