Quinta de Carvalhiços Reserve Magnum Red
Aged for 4 months in used French oak barrels. A wine concentrated and deep in the aroma, with a floral edge of great intensity, forest, pine forest and wild berries. Dense mouth with good structure, with present and appealing tannins with discreet vanilla finish. Alcoholic fermentation was carried out in stainless steel with temperature control at 27°C, with grapes that had been destemmed.

Chryseia 2021 was produced from a rigorous selection of grapes from Quinta de Roriz and Quinta da Perdiz, properties of Prats & Symington. As in all previous editions of Chryseia, there was also the usual contribution from Roriz's neighboring vineyard, Quinta da Vila Velha, privately owned by Rupert Symington. It symbolizes the union of the noble Portuguese wine heritage with the no less rich Bordeaux oenological tradition.

Reception with destemming and immediate crushing. Fermentation in stainless steel vats of 18 tons capacity, with tanning at around 26ºC. Intense and prolonged macerations and partial malolactic fermentation in French oak barrels. Stage for 10 months in new and used French oak barrels. The stage begins to obtain a wine of great aromatic elegance, where the aromas of the Douro are not masked by the excess of barrel notes. Very smooth and well-ripened tannins, fresh and aromatic, very elegant, with an unusually long finish.

Manual harvesting for 15kg boxes. Total de-stemming with slight crushing after selecting the grapes. Fermentation in stainless steel vats at controlled temperatures. Partial aging (60%) for 12 months in used French oak barrels. Notes with floral notes and bergamot from Touriga Nacional and ripe red fruit, to which are added the light and toasted notes of the barrel. Mouth with good acidity, volume and present but soft tannins.

Manual harvesting for 15kg boxes. Total de-stemming with slight crushing after selecting the grapes on the sorting mat. Alcoholic fermentation in stainless steel mills at controlled temperatures. Aged for 23 months in used French oak barrels and 1 and a half years in bottle. Notes of black and red fruit well integrated with notes of spice and slightly smoked barrel. in the mouth it has delicate tannins, good volume and very present acidity, which makes it simultaneously powerful and elegant.

Manual harvesting for 15kg boxes. Total de-stemming, without crushing the berries, after careful selection of the grapes. Spontaneous fermentation in a stainless steel press. Malolactic fermentation and aging in stainless steel tanks. Deep color, aroma of ripe wild fruits and a slight note of eucalyptus leaves with volume, good acidity and present but soft tannins, it shows surprising freshness.

Manual harvest in 15kg boxes. Total de-stemming, without crushing the berries, after careful selection of the grapes. Spontaneous fermentation in stainless steel mills with minimal intervention. Malolactic fermentation and aging in stainless steel tanks. The Trincadeira grape variety in the Monte da Raposinha terroir made it possible to create a red wine with a low alcohol content, open color, good acidity and very soft tannins. The aroma reveals fresh red fruit and dry tobacco leaf.

Fermentation at a temperature of 25ºC for a period of 10 days. Stage in stainless steel vats for a period of 14 months, followed by a stage in the bottle for 15 months. Ruby color. Aroma of red fruits and ripe plum, showing subtle notes of wild flowers. In the mouth it is round and with ripe tannins. Long and persistent finish.

Grapes from 23-year-old vines. Manual harvest and selective choice for 20 kg boxes. Second selection of grapes at the sorting table. Crushing with total destemming and pellicular maceration. Fermentation in stainless steel vats for 10 days at controlled temperature. Aging in new and used French oak barrels for 24 months, followed by a 6-month aging in the bottle until release. Intense ruby color marked. Deep on the nose with notes of bergamot and red black forest fruits. In the mouth it is full-bodied and voluminous. It has a prolonged finish.
Terra Chama Jaen Grand Reserve Red
Grapes from 23-year-old vines, hand-picked into 20kg boxes. Second selection of grapes at the sorting table. Crushing with total destemming and pellicular maceration. Fermentation in stainless steel vats for 12 days at controlled temperature. Aging in new and used French oak barrels for 13 months, followed by a 6-month aging in the bottle until release. Ruby red color. Aroma with notes of cherry, blueberry and eucalyptus. On the palate it is structured, fresh and firm, with soft and silky tannins.
Quinta do Sobral Rose
The grapes were completely destemmed and immediately pressed in a pneumatic press. The tear must was cooled and decanted at low temperatures for 24h. The clean must started fermentation in stainless steel, with indigenous yeasts and controlled temperature. 75% Aged in temperature-controlled stainless steel vats to enhance the aromas of the grape varieties, and 25% in 500lt French oak barrels. This rose on the nose presents aromas of red fruits in the mouth it is wide and voluminous with a medium finish.

Manual harvest in 18Kg boxes, careful selection of the best grapes in the vineyard. The grapes were completely destemmed in small stainless steel vats, where they were macerated for 24 hours at low temperature, before starting alcoholic fermentation, with indigenous yeasts and controlled temperature. Alcoholic fermentation lasted 15 days, with mechanical treading for good extraction of color and aromas. After fermentation, it was transferred to new 225L French oak barrels, where it remained for 9 months until completing the malolactic fermentation here. Notes of berries, spices and floral notes typical of the variety. In the mouth it is enveloping with good acidity and a very elegant mineral background.

The grapes were completely destemmed in small stainless steel vats, where they were macerated for 24 hours at low temperature, before starting alcoholic fermentation, with indigenous yeasts and controlled temperature. Alcoholic fermentation took place in stainless steel vats, with gentle mechanical treading for good color and aroma extraction. After fermentation, it was transferred to a stainless steel tank, where it naturally decanted until bottling. Intense ruby color, very aromatic, with hints of strawberries and raspberries and a light floral. In the mouth it is balanced and fresh, with present tannins and a long and soft finish.

Manual harvest, reception with total destemming and immediate crushing, the grapes are fermented by variety and by batch, so that a rigorous selection can be made from an early age that will later give rise to the “blend”, very traditional in the old world, reveals the art of selecting grapes by plots and the art of selecting wines to later make batches. Aging for 50% of the batch for a period of 8 months in used French oak barrels and the remaining 50% in stainless steel vats.

Complex fragrant aromas of wild berries, with hints of earth and licorice. Soft, smooth and creamy palate, well balanced with firm tannins, giving structure and longevity.

Produced in Portalegre, northeast of Alentejo, in the granite foothills of Serra de São Mamede, where the colder temperatures, together with many old vines, give complexity and freshness. Placed before being gently crushed, with a short maceration period. Aged in stainless steel. Flavor of wild berries, blackberries, red currants. Long, fresh and juicy with soft tannins. Vibrant aromas of light summer fruits.
