The grapes were fermented in stainless steel vats with temperature control and reassembly, with a capacity of 3000 kg. Malolactic fermentation in stainless steel tanks passed to new French Allier oak barrels, where it remained for 20 months. Quinta do Vallado Adelaide Magnum has a very concentrated aroma. With balsamic notes of oak, fig, black plums and tobacco. In the mouth is full-bodied, firm, ripe with satin tannins. Mineral notes and a complex and persistent finish very elegant. Contains Sulfites.

Quinta dos Cardeais Grande Reserva Red is the result of meticulous winemaking, which begins with careful stemming followed by light crushing. Pre-fermentation maceration lasts 48 hours before spontaneous fermentation in stainless steel vats at controlled temperatures, ending with post-fermentation maceration lasting 10 to 15 days. At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of the mulch in the fermentation of the grapes. The essence of woodcarving winemaking has changed little in more than two thousand years. In this process, the white grapes are slightly crushed by foot and manually destemmed on a ripanço table. Fermentation takes place, without stems, in pots with an average capacity of 1,600 liters at a temperature of around 28ºC, being controlled by watering the pots 4 times a day. Fermentation takes approximately 8 days, leaving the wine in contact with the masses. Aged in amphorae for a period of 4 to 10 months, depending on the vintage. During this period, a film of oil is placed to prevent oxidation. Amber color, aroma of dried fruits, especially hazelnut. Spices, evolved, white pepper, ripe kiwi, bread, liqueur, hay. Elegant, complex palate, good acidity with a dry finish. Long and persistent finish. Contains sulfites.

After being selected, the grapes are stalked at the entrance of the cellar, crushed and driven to stainless steel mills with robotized steps. It is at this stage that the pre-fermentative maceration is carried out at low temperatures. Subsequently the fermentation is carried out in stainless steel tanks at a maximum controlled temperature of 28ºC. Intense deep red color with violet tones. Intense, fresh and complex aroma, dominated by ripe fruits such as blackberry, plum and cassis, some floral aromas, such as violets, and tertiary aromas from its "elevage" in barrels like spices.
