Quinta de Arcossó Arinto White

Mr. Amílcar chose to ferment this white wine, an Arinto from Quinta de Arcossó, directly in the Vidago region, 450 meters above sea level in Trás-os-Montes (Ribeira de Oura). He adopted a unique approach: 80% of the fermentation took place in stainless steel tanks with 'bâtonnage', while the remaining 20% was fermented in French oak barrels. After this process, this delicious Arinto was aged in bottles for 30 months.
Enhance the flavor of this white wine by decanting it for an hour before serving.
Quinta de Arcossó, located in Trás-os-Montes, is a wine project dedicated to artisanal wine production. Using a minimalist winemaking approach, inspired by ancient techniques dating back to Roman times, the farm produces distinctive wines known for their notable acidity, ripe fruit and robust tannins. Adega de Borba Reserva 3x Red

With grapes from the most typical Alentejo grape varieties produced in the sub-region of Borba, the label Cortiça wine was produced, a true ex-libris from the Adega de Borba. Coming from old vines, the grapes had a strict control in the evolution of the maturation, having been harvested in small quantities. In the Cellar, after the destemming and soft crushing of the grape, the alcoholic fermentation began, which lasted for about 10-15 days with the temperature controlled at 24ºC, for greater extraction of the aromas and fruity flavors of the grape. In order to increase the polyphenolic complexity, the tannins and the structure of the wine, it remained in the vat in a post-fermentative maceration process. The malolactic fermentation occurred later in stainless steel containers. To enhance and elevate its organoleptic characteristics, the wine aged 12 months in 3rd and 4th year barrels, French oak and exotic wood barrels. followed by a six-month bottling stage in the basement. Aroma fine and elegant, suggesting black fruits, compote and white chocolate. Contains Sulfites.
Caves São João 98 Years of Story White

This wine was created with minimal intervention, in order to respect the qualitative potential of the exceptional grapes that originated it, as well as respecting the classicism of white wines from Dão and those from Caves São João, in particular. For this reason, aging on fine lees took place in wooden vases, already heavily winered, for a period of 6 months, having been bottled without stabilization, after a very coarse filtration. With a straw yellow color and a very complex aroma, with evident mineral notes (flint and flint), phosphorus, spices, dry vegetable and very faint fruity notes and dried flowers. The wood notes are perfectly integrated, being practically imperceptible. It has great freshness and gustatory volume, however it is also elegant and quite persistent, characteristics that give it excellent gastronomic aptitude and for ageing. .

This wine is a tribute to my father, Julio Bastos. It is a wine that results from the selection of the best grapes from the old vineyards of Alicante Bouschet, which were trodden in marble wineries and vinified with controlled temperatures. The stage is made in new French oak barrels for 14 months. The wine has an opaque and violaceous ruby color, with pure aromas of china ink, liquorice, notes of wild and balsamic fruits. Sauternes, 40 miles south of Bordeaux city, is a village famous for its high-quality sweet wines. The Sauternes of Chateau Les Justices have always been highly appreciated by the best French restaurant for the high quality regularly maintained over time, Sauternes is a very long-lived. The vineyards are located in the municipality of Preignac, ideal environment for the development of noble rot (Botrytis Cincerrea), the vines have an average age of 25 years. The soil is stony (Graves) mixed with sand characterized by a clay part; subsoil consists of a layer clay-limestone which rests on the rock. The harvest is manual. Fermentation takes place in temperature controlled stainless steel tanks and lasts about three weeks. Followed by aging in vat at first, then in new oak barrels for 12/18 months.
