With grapes from the most typical varieties of Alentejo, produced in the sub-region of Borba, the wine Rótulo Cortiça was crafted, a true ex-libris of Adega de Borba. Sourced from old vines, the grapes underwent rigorous control of ripening evolution and were harvested in small quantities. At the winery, after destemming and gentle crushing of the grapes, alcoholic fermentation began, lasting about 10-15 days with temperature controlled at 24ºC, to better extract the fruity aromas and flavors of the grape. To increase polyphenolic complexity, tannins, and wine structure, it remained in the vat in a post-fermentation maceration process. Malolactic fermentation subsequently took place in stainless steel tanks. To enhance and elevate its organoleptic characteristics, the wine aged for 12 months in 3rd and 4th year French oak barrels and exotic wood vats, followed by a 6-month bottle aging period in the cellar. A fine and elegant aroma, suggesting black fruits, jam, and white chocolate. Contains sulfites.
