The grapes are left to ferment for the first time, transforming the juice into base wine. Remaining in the tank allows the development of the complexity of the aromas and the structure of Elpídio Superior Sparkling Wine. The elegance and delicacy of the aroma suggest soft notes of white-fleshed fruits, reminiscent of pear and apple, with light citrus fruit and some toast.
