Alvarinho single-varietal sparkling wine, citrus yellow in color, with fine bubbles and persistent string. It presents a good balance between acidity and alcohol, where the fruity aroma of the Alvarinho grape persists. It should be served between 8ºC and 10ºC, being ideal to accompany roasts, red meat, suckling pig, cheeses and oysters. This superior quality sparkling wine comes from Alvarinho grapes harvested on a small plot, located at an altitude of between 300 and 350 meters, aged close to 20 years, protected from north winds and on granite soils. providing the development of small berries, with a thick skin and slow maturation, in order to preserve all the aromatic complexity of the grape. These grapes are harvested earlier so that the total acidity is higher and its probable level is no more than 11.7%, resulting in a fresh, light sparkling wine, with fine and persistent bubbles. The Alvarinho grapes used in the Winemaking of the Sparkling Soalheiro are selected in the vines with a lower sugar concentration and fresh acidity implanted in soil of granite origin between 100 and 200 meters of altitude. Melgaço, the northernmost region of Portugal, is protected by a series of mountain ranges that allow a perfect marriage between rainfall, temperature and the number of hours of sunshine required to better ripen the grapes of the Alvarinho variety. from the Alvarinho grape variety requires a careful choice of grapes. The wort resulting from this selection ferments the temperature controlled, obtaining the base wine for sparkling wine. This wine suffers, already in bottle, a second fermentation. The permanence in the basement, the low temperature and constant for several months allows this sparkling wine to show all the elegance of the Alvarinho variety. After this stage of fermentation and stage, degorgement is carried out, an operation that allows the elimination of the existing yeasts in the bottle and the replacement of the provisional metal capsule by the definitive stopper typical of the sparkling wine. It presents yellow citrine color, fine and persistent bubble. The aroma reveals the fruit of the Alvarinho variety, denoting a good balance between acidity and alcohol. Soalheiro Pet Nat Alvarinho White
Looking at the sky is the oldest tool in winemaking. Pet Nat Alvarinho is a sparkling wine inspired by the ancestral method, a wine with a natural movement and elegant bubbling. The vinification process, with little intervention, resorts to the end of the first alcoholic fermentation in the bottle, without resorting to dégorgement or the addition of sugars. Innovation has led Soalheiro to wines that in the past seemed unlikely to experiment with the Alvarinho variety. Our Pet Nat confirms the elasticity of the variety and proposes the relaxed discovery of a light and youthful sparkling wine. It is a fresh and light wine, with a soft touch at the end of the mouth, due to a spontaneous fermentation stop.
Soalheiro Barrica Bruto White
The Sparkling Soalheiro Espumante Bruto Barrica ferments and stews in used oak barrels for 12 months before the second fermentation. This stage will give the sparkling wine a more evolutionary and intense aroma character, as well as a broader and more persistent good texture. The permanence in the basement, the low and constant temperature for 36 months allowed this sparkling wine to show all the elegance of the Alvarinho variety in a perspective of greater complexity and less fruit. The elaboration of a sparkling wine from the Alvarinho grape variety demands a careful selection of the grapes. Our tradition was based on the neutral fermentation in stainless steel to obtain the base wine with more fruit intensity. Soalheiro Bruto Barrica ferments and staggers in used oak barrels for 12 months before the second bottle fermentation. This stage will give the sparkling wine a more evolutionary and intense aroma character, as well as a broader and more persistent good texture. The permanence in the basement, the low temperature and constant for 36 months allowed this sparkling wine to show all the elegance of the Alvarinho grape variety in a perspective of greater complexity and less fruit to which the sparkling classic Soalheiro has accustomed us.
