Quinta D’Amares Pét Nat White
Produced using the Ancestral Method, discovered by Benedictine monks in the 16th century, which consists of bottling the wine during the fermentation process, naturally creating a smooth and elegant bubble. The grapes were subjected to gentle pressing. After clarification by static decanting, the alcoholic fermentation occurred at about 15ºc, obtaining the base sparkling wine. 15% of the batch was fermented in French oak barrels of 3 and 4 years where it remained on the lees for 8 months. After tartaric stabilization of the base wine, the second bottle fermentation was then run. The bottle stage on the lees of the second fermentation was approximately 20 months. Contains sulfites.
Soalheiro Pet Nat Alvarinho White
Looking at the sky is the oldest tool in winemaking. Pet Nat Alvarinho is a sparkling wine inspired by the ancestral method, a wine with a natural movement and elegant bubbling. The vinification process, with little intervention, resorts to the end of the first alcoholic fermentation in the bottle, without resorting to dégorgement or the addition of sugars. Innovation has led Soalheiro to wines that in the past seemed unlikely to experiment with the Alvarinho variety. Our Pet Nat confirms the elasticity of the variety and proposes the relaxed discovery of a light and youthful sparkling wine. It is a fresh and light wine, with a soft touch at the end of the mouth, due to a spontaneous fermentation stop.
Soalheiro Barrica Bruto White
The Sparkling Soalheiro Espumante Bruto Barrica ferments and stews in used oak barrels for 12 months before the second fermentation. This stage will give the sparkling wine a more evolutionary and intense aroma character, as well as a broader and more persistent good texture. The permanence in the basement, the low and constant temperature for 36 months allowed this sparkling wine to show all the elegance of the Alvarinho variety in a perspective of greater complexity and less fruit. The elaboration of a sparkling wine from the Alvarinho grape variety demands a careful selection of the grapes. Our tradition was based on the neutral fermentation in stainless steel to obtain the base wine with more fruit intensity. Soalheiro Bruto Barrica ferments and staggers in used oak barrels for 12 months before the second bottle fermentation. This stage will give the sparkling wine a more evolutionary and intense aroma character, as well as a broader and more persistent good texture. The permanence in the basement, the low temperature and constant for 36 months allowed this sparkling wine to show all the elegance of the Alvarinho grape variety in a perspective of greater complexity and less fruit to which the sparkling classic Soalheiro has accustomed us. It has an intense yellow color, a fine, persistent bubble. The aroma reveals tertiary and vanilla aroma, denoting a good balance between acidity and alcohol. The taste presents persistence, complexity, but at the same time elegance. Contains sulfites.
