The fermentation takes place in stainless steel tanks at a higher temperature than usual in white wines, showing an elegant and more mineral aroma with a dry and persistent finish. The Alvarinho grapes used in the Soalheiro Soalheiro come from small-sized vineyards implanted in soil of granite origin above 200 meters altitude and located in the private microclimate of the Monção and Melgaço sub-region, the northernmost region of Portugal. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation in stainless steel tanks at a higher temperature than usual, using pre-selected yeasts for this purpose.
