Encoberta Red

Encoberta is the name of a small town in Penalva do Castelo (Castendo sub-region), where this wine was made with its own grapes. Vineyards aged 28 years at an altitude of 460 m with granite and clay soils are being converted to organic certification since 2020. It ferments with indigenous yeasts in French oak vats and with 35% whole bunch followed by 30 days of cuvaison. Aged for 15 months in used French oak barrels and vats. Naturally stabilized. It is a very characteristic red from Dão, from Penalva do Castelo. A little more fruity, denser and more textured than Serra da Estrela wines, black fruit and spicy notes also in the mouth. Dry, some earthy character, and a slightly tannic finish. Contains sulfites.

Manual harvest, degummed and fermented grapes with thermal control in a small volume stainless steel mill with a moderate mechanical step. Malolactic fermentation in new barrels selected from French oak in an air-conditioned environment, followed by a stage in new barrels for wine-wood integration, 18 months. After a gentle filtration, the wine was bottled and rested for thinning for 12 months in the basement. This wine was made from grapes from the oldest vineyards in the region of Borba, with two of the most emblematic and representative grape varieties of the region, Trincadeira and Alicante Bouschet, settled in shale soils. Color grenade with red nuance. Good aromatic intensity, with emphasis on forest fruits, chocolate, tobacco and toast. Flavor soft, with freshness, texture of strong tannins and oily to black fruits and spices. Silky, prolonged and persistent finish of great elegance. Contains Sulfites.

Cabeço de Mocho Great Selection is the result of the excellent combination of the Alfrocheiro, Jaen, Tinta Roriz and Touriga Nacional varieties, produced and vinified at Quinta das Camélias. Features a deep ruby color with red nuances. The aroma is very complex and delicate, showing mature notes of cherry and black aroma, harmonized with expressions of fresh vanilla and a slight nuance to cloves. In the mouth it is a full and round, well muscled with the presence of educated tannins. Demonstrates finesse, exquisite bouquet and a long persistence. Should be served at 16-18ºC, accompanied with dishes of red meats and strong cheeses. Fermentation with controlled temperature up to 28ºC for 8 days. Stage 6 months in French oak and American toast medium. Contains Sulfites.

Manual selection of curls, total destemming followed by gentle pressing. Spontaneous fermentation in stainless steel tank. Stage in thin sludge until January.Cor: citrine with light straw reflections. A very fine and elegant aroma, highlighting the delicate floral notes (and characteristics of the grape variety). In the background and to convey complexity to the whole, we are surprised by its fruity side that this year balances between citrus fruits and tropical fruits.
