Mr. Amílcar chose to ferment this white wine, an Arinto from Quinta de Arcossó, directly in the Vidago region, 450 meters above sea level in Trás-os-Montes (Ribeira de Oura). He adopted a unique approach: 80% of the fermentation took place in stainless steel tanks with 'bâtonnage', while the remaining 20% was fermented in French oak barrels. After this process, this delicious Arinto was aged in bottles for 30 months.
Enhance the flavor of this white wine by decanting it for an hour before serving.
Quinta de Arcossó, located in Trás-os-Montes, is a wine project dedicated to artisanal wine production. The Dom Rafael red stalks in casks of Portuguese chestnut and oak and in French oak barrels for 12 months, after which it staged for at least another 6 months in the bottle. Grapes harvested by hand and transported to the cellar in 20kg boxes, then stepped on foot in granite presses, without destemming and without adding yeast. As soon as the alcoholic fermentation ends, the wine is transferred to stainless steel vats. Aging for 10 months in stainless steel vats. It has an aroma with very ripe strawberries and cherries, fresh leaves, aromatic herbs and spices. In the mouth it shows good definition and well-focused acidity, concentrated body, fine tannins and long finish. Complex, round, deep, a red that deceives the eye, with rosé color but with depth that belies visual impressions. Contains sulfites.
