Aged for 13 months in new 400L French oak barrels. In 2009, after yet another dry winter, hot summer conditions clearly indicated that an early harvest was likely and good weather and considerable heat throughout the final ripening period brought one of the earliest harvests at Quinta do Vesuvio. The combination of drought and very hot temperatures in August and September set the stage for a challenging crop. In fact, this was one of the smallest vintages in the Douro over the last 15 years, with some of the region’s main varietals failing in some areas under the difficult conditions. Contains sulfites.

The grapes were harvested manually and transported to the cellar where they were destemmed. Alcoholic fermentation took place in stainless steel tanks at 26–27°C. After finishing, we kept the wine in post-fermentation maceration for 5 days. The malolactic fermentation occurred naturally in a stainless steel tank and then it was transferred to barrels where it remained for 18 months. Aged for 18 months in French oak barrels and 36 months in bottle. Powerful nose with notes of black fruit wrapped in spices and tobacco. In the mouth, the intensity of the freshness of Cabernet Sauvignon stands out, followed by the creamy texture of Alicante Bouschet, which leads us to an elegant and persistent finish. Manual harvest into small 15 kg perforated boxes, fermentation in a reductive environment, using very gentle crushing and pressing processes under an inert atmosphere in order to preserve all the aromatic potential of the grapes. A great effort is made to ensure that all pre-fermentation operations are carried out with the utmost rigor, being responsible for the intrinsic quality of the future wine. The entirety of the wine ferments in stainless steel vats and remains there after a small racking on fine lees with periodic “battonage” preparation until the final batch is made. Aging in stainless steel vats with preparation of fine lees - 'batonnâge' until bottling. Great concentration and aromatic purity, with mineral character in balance with discreet notes of exotic fruits and citrus. In the mouth it shows a lot of volume and freshness, very long with very lively natural acidity. Contains sulfites.
Carm Red

Total destemming, soft crushing and thermal shock, followed by a period of cold pre-fermentative maceration in the mill for about 12 to 24 hours, after which the masses were transferred to large and low fermentation vats. Maceration for 8 days at 22ºC. In the nose very fresh and elegant with notes of wild fruits and black cherries in balance with seductive nuances of "liquorice", the aroma being complexed by the discreet notes of wood. In the mouth it is hot, showing firm tannins with a smooth texture and a very persistent finish. This wine accompanies meat dishes, cheeses and, in general, Mediterranean cuisine. Contains sulfites.

Quinta do Fojo, located on the picturesque left bank of the Pinhão Valley, is the birthplace of the exceptional Quinta do Fojo Red 2016.
