Quinta da Carolina Xisto Amarelo Red

Ferment in a cement mill, whole bunch with the traditional Douro tread. During fermentation, extraction is minimal, as are all interventions in this wine. It ages in a 1000 liter German oak foundre, over 50 years old, for 1 and a half years and is bottled by hand without filtering or sticking and with minimum levels of sulfites. Of dense violet color, typical of a fermentation with a lot of Touriga Franca in a wine press, the Yellow Schist is very floral on the nose, with some notes of rock rose and pink pepper. In the mouth it contrasts very fresh, black fruit of the forest and some white pepper with a mesh of firm tannins that make the finish very persistent. Contains sulfites.

Aged for 4 months in used French oak barrels. A wine concentrated and deep in the aroma, with a floral edge of great intensity, forest, pine forest and wild berries. Dense mouth with good structure, with present and appealing tannins with discreet vanilla finish. Alcoholic fermentation was carried out in stainless steel with temperature control at 27°C, with grapes that had been destemmed.

50% of the stemmed grapes and 50% of the destemmed grapes fermented for 15 days at controlled temperatures between 20 and 23ºC, with little skin maceration. After being selected, the grapes are stalked at the entrance of the cellar, crushed and driven to stainless steel mills with robotized steps. It is at this stage that the pre-fermentative maceration is carried out at low temperatures.
