Quinta da Carolina Xisto Amarelo Red

Ferment in a cement mill, whole bunch with the traditional Douro tread. During fermentation, extraction is minimal, as are all interventions in this wine. It ages in a 1000 liter German oak foundre, over 50 years old, for 1 and a half years and is bottled by hand without filtering or sticking and with minimum levels of sulfites. Of dense violet color, typical of a fermentation with a lot of Touriga Franca in a wine press, the Yellow Schist is very floral on the nose, with some notes of rock rose and pink pepper. In the mouth it contrasts very fresh, black fruit of the forest and some white pepper with a mesh of firm tannins that make the finish very persistent. Contains sulfites.

Quinta de Arcossó Reserva White is an exceptional example, the result of a careful selection of grapes from two different parcels. The first, a 2.5-hectare plot, is part of a 12-hectare vineyard planted in 2003, while the second, 5 hectares, is part of a set of 8 hectares planted between 2016 and 2017. Both are located on generous slopes, at altitudes of 400 and 500 meters, respectively, facing South and Southeast, with significant slopes and granite soil, guaranteeing the excellence of the raw material.
The vinification of this White Reserve is carried out with meticulous care, where around 40% of the alcoholic fermentation takes place in French oak barrels, accompanied by "bâtonnage" over 10 months. This process gives the wine a unique complexity and richness, evident in its multifaceted aroma, which combines fruity nuances with a very subtle touch of wood and distinct notes of wet stone, adding depth to its taste profile. After bottling, the wine is carefully aged in the bottle for 4 months, ensuring the evolution and perfection of its character.
Upon tasting, Quinta de Arcossó Reserva White reveals a full body, fresh and at the same time unctuous, a true delight for the palate. The finish surprises with a hint of salinity, making each sip a unique and memorable experience. Produced from Touriga Nacional, Touriga Franca, Tinta Roriz, Tinta Barroca, Sousão, harvested in Cabêda (Alijo) Cima Corgo and in Pocinho V.N. Foz Côa, Douro Superior. This Superior red aged in French oak barrels for between 16 and 18 months. It has a lively ruby color and complex aroma, large volume, lively acidity, very well integrated, and finely cut tannins. Its finish is very long, elegant and highly harmonious. Edition of 6000 bottles. Contains sulfites.

Vinified from grapes from selected plots. After maturation tests, the grapes were harvested at their optimum ripeness point. After total stemming and gentle crushing, maceration and fermentation took place, with pumping over in stainless steel vats at a controlled temperature of 28ºC, for around 12 days. We thus obtained intense, elegant wines with an expression of the place. After malolactic fermentation, the wines aged in French oak barrels for around 12 months. It was subjected to light filtration before bottling. In order to preserve its quality, it was bottled without cold stabilization treatment, which may cause deposits to form during aging in the bottle. Bright red color. Attractive aroma with notes of currant, black plum and mustard seeds. In the mouth it is fresh, very complete and elegant. It has present and fine tannins, very well integrated. Contains sulfites.

Transport in 20 kg boxes, destemming with crushing, pre-fermentation maceration for 48 hours, inoculation followed by fermentation in stainless steel vats below 24ºC. Aging in French oak barrels where it remains for 10 months. Good aromatic impact, with ripe white fruit and notes of wood, but forming a balanced whole. Serious and with good austerity. Good volume in the mouth and discreet but present acidity. Contains Sulfites.

The grapes, coming from the manual harvest of our associates, are immediately stalked and crushed. With the addition of selected yeasts, the fermentation begins at controlled temperature (25ºC). During this period the maceration or tanning is done by the process of timed reassembly, in order to have a greater extraction of color and tannins. The tanning lasts about 15 days.
