Quinta da Carolina Xisto Amarelo Red

Ferment in a cement mill, whole bunch with the traditional Douro tread. During fermentation, extraction is minimal, as are all interventions in this wine. It ages in a 1000 liter German oak foundre, over 50 years old, for 1 and a half years and is bottled by hand without filtering or sticking and with minimum levels of sulfites. Of dense violet color, typical of a fermentation with a lot of Touriga Franca in a wine press, the Yellow Schist is very floral on the nose, with some notes of rock rose and pink pepper. In the mouth it contrasts very fresh, black fruit of the forest and some white pepper with a mesh of firm tannins that make the finish very persistent. Contains sulfites.

When we were preparing the land for planting in 2004 we came across 1 ha of land that had a completely different soil from the rest of the farm, deeper, less stony, more fertile and with greater availability of water. This parcel is in a more sheltered area, with fewer hours of sun exposure. It was evident to us that although we were facing letter A land (considered optimally to produce Port wine), we had an opportunity to produce excellent white grapes. Just like in the red we tried to make a personalized wine with an expressive aroma and with a depth and freshness that characterize all our wines. Contains Sulfites.

Produced from the Touriga Nacional, Alfrocheiro and Tinta Roriz varieties, it is a red with some ambition, with a fruit and chocolate aroma and lightly toasted. In the mouth it has solid tannins, very mature and with a strong body, finished with nuances of spices. Accompanied with red, stewed or grilled meats, hunter dishes and well-structured cheeses. Crushing with total destemming, prolonged and smooth skin maceration, alcoholic fermentation at 26ºC. Stage for 6 months in French oak barrels. Contains Sulfites.
