After being selected, the grapes are stalked at the entrance of the cellar, crushed and driven to stainless steel mills with robotized steps. It is at this stage that the pre-fermentative maceration is carried out at low temperatures. Subsequently the fermentation is carried out in stainless steel tanks at a maximum controlled temperature of 28ºC. Intense deep red color with violet tones. Intense, fresh and complex aroma, dominated by ripe fruits such as blackberry, plum and cassis, some floral aromas, such as violets, and tertiary aromas from its “elevage” in barrels like spices. It has firm tannins, ripe and smooth and a balanced acidity. Contains Sulfites.

Cabeço de Mocho Great Selection is the result of the excellent combination of the Alfrocheiro, Jaen, Tinta Roriz and Touriga Nacional varieties, produced and vinified at Quinta das Camélias. Features a deep ruby color with red nuances. The aroma is very complex and delicate, showing mature notes of cherry and black aroma, harmonized with expressions of fresh vanilla and a slight nuance to cloves. In the mouth it is a full and round, well muscled with the presence of educated tannins. Demonstrates finesse, exquisite bouquet and a long persistence. Harvest by Hand. Grapes from an old vineyard of Encruzado variety of the Ribeiro Santo Estate. Pressed grapes with 100% stems. Must grape selection and decantation at low temperatures. Fermentation only in stainless steel vats with the wines indigenous yeast, followed by a slight filtration just before bottling.Clear color, with hints of white fruit, citrus and hints of wet rock. On the palate it shows youth and freshness, with a vibrant acidity and an engaging mouthfeel. In each harvest, it is Nature's last decision because it is his stimuli that prevail. That is why the choice of the plot that gives rise to this wine varies from year to year. In the 2016 harvest, the best grapes from the “Porto” stand were selected, due to their exposure and availability of water in the soil, which helped the maturation to be long and regular, creating a good balance in the fruit, between acidity, color and tannins.
It is a very potent version of Touriga-Nacional where a good but discreet barrel is combined with a concentrated wine without being too extracted. Contains sulfites.
