This wine comes from the vineyards of Seia, vinified in cement mills with foot steps and in stainless steel tanks. It aged for 12 months in oak barrels, of which 20% new. Being Dão de terroir par excellence for the Touriga Nacional, it is on the slopes of the Serra da Estrela that this variety finds perfect maturation conditions. Beautiful violet color and exceptional aromatic complexity, with the usual floral notes, black fruits and wild berries. It is a very structured and rich wine, but with an excellent acidity that gives it minerality and nerve. It is undoubtedly our most complete and complex varietal wine, which is still taking its first steps, has a long life ahead. Contains Sulfites.

Produced from a vineyard over 100 years old where Arinto dos Açores dominates, but there are also Verdelho, Boal (Malvasia Fina) and Alicante white (Boal de Alicante). Harvested by hand, selection on a selection table, direct press, cold decanted 12h, first presses vinified in stainless steel in a horizontal vat, 2nd presses fermented in French oak barrels for 3 years of use, without batonnage for 9 months. These wines associate their quality with the name of the Carthusian monks who, since 1598, lead a solitary prayer life in the Monastery of Santa Maria Scala Coeli. Produced from the carefully selected vine varieties, Alicante Bouschet eTincadeira, planted in the older vineyards of the Eugénio de Almeida Foundation. When the grapes reach the ideal stage of maturation, they are harvested and transported to the winery, where the technological process begins with total destemming and slight crushing. The grapes are then fermented separately in stainless steel vats and French oak vats, at a temperature of 27 ° C, followed by 15 day maceration. This wine aged for 15 months in new French oak barrels and 12 months in the bottle. Contains Sulfites.
