In the mouth it reveals great impact, voluminous and enveloping. Very different tannins, notes of apricot and peach. Medium in a fresh and dry mouth, at the end you can clearly see the richness of this different wine with notes of toasted and well salted nuts. Manual harvest, uncrushed grapes, carbonic maceration with fermentation starter with whole berry. Manual reassembly 2x day and temperature 24ºC. overlapping stage for 365 days until the harvest date of the new harvest. Static decantation for 6 months and consequent stage on lees. 1 year aging in bottle before coming to the market. Contains Sulfites.

The Proibido wine originates in Vinhas Velhas between 40 and 80 years of age, coming from Vila Nova de Foz Côa. Small plots facing north or east between 250m and 500m altitude. All work is practically done by hand, without the use of herbicides or pesticides. When necessary, we till the land with the help of a work horse. We therefore respect what the vineyard gives us, and we try to make the transformation of the grapes into wine as natural as possible. gentle maceration and low temperature fermentation. Aging 15 months in used barrels. This wine presents a well-marked black fruit on the nose with great intensity, toasted notes and spices. Manual harvest. Grapes from a single vine of the Encruzado variety, from Quinta do Ribeiro Santo. Total destemming. Prolonged maceration in stainless steel tanks. Alcoholic fermentation with indigenous yeasts along with the doughs. Fermentation temperature around 17ºC. At the end of Fermentation, the masses are pressed separating the tear from the press. Lot made from press and tear wine. Gold color. Complex nose with notes of white fruit, citrus and some wet stone. In the mouth it is fresh and structured. A vibrant acidity that demonstrates aging potential. A white with a long, vibrant finish. Contains sulfites.

The rosé at Casa de Santar is, perhaps, the realization of an old idea. There is even a curious story in which a French oenologist came to Santar one day to make his first experiments with rosé wine. This rosé was never sold, but it helped us to realize that if there is a place in Portugal to make a rosé with a Provencal accent, it could only be in the vineyards of Casa de Santar. Produced exclusively from Touriga Nacional, it is balance and finesse. It is a dry rosé, ideal to accompany sophisticated meals and that will not leave anyone indifferent. Contains sulfites.
