The vinification process, with little intervention, resorts to the end of the first alcoholic fermentation in the bottle, without resorting to dégorgement or the addition of sugars. Innovation has led Soalheiro to wines that in the past seemed unlikely to experiment with the Alvarinho variety. Our Pet Nat confirms the elasticity of the variety and proposes the relaxed discovery of a light and youthful sparkling wine. It is a fresh and light wine, with a soft touch at the end of the mouth, due to a spontaneous fermentation stop.
Soalheiro Germinar Loureiro Vinhas Velhas White
Grapes are harvested by hand. After pressing, before fermentation, the must is clarified. Fermentation takes place in a stainless steel tank at a low temperature and in two egg-shaped deposits in our innovation area, one stainless steel and the other cement, so that the final batch, due to the constant battonage in the fine lees, transmits complexity and taste persistence superior to what we normally find in this variety. Alvarinho grapes are harvested manually in the vineyards of Quinta da Soalheiro, where we use production concepts that value biodiversity and the wine-growing ecosystem, promoting environmental sustainability. The color and aroma are intense and despite the absence of added sulfites the aroma and the flavor have minerality and fruit. flavor is complex with soft onset and round due to malolactic complete with striking and intense finish.
Soalheiro Granit Magnum White
The Soalheiro Granit reveals the more mineral side of the Alvarinho variety. Alvarinho grapes are harvested manually from a selection of grapes from our vineyards in Quinta de Soalheiro, produced according to the concepts of organic farming where we protect the wine ecosystem, promoting biodiversity and environmental sustainability. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation and stage in (new and used barrels), remaining in the fine lees with periodic batonnage until the end of June. Intense yellow color, elegant and persistent aroma with nuances of barrel, maintaining the freshness and the fruit of the Alvarinho variety. The flavor is full bodied and complex.

Soalheiro Sauvignon Blanc / Alvarinho White
Sauvighon Blanc (70%) and Alvarinho (30%) ferment after gentle decantation in stainless steel tanks between 16 and 18ºC. In this way, a wine at the same time aromatic, with vegetable touches of Sauvignon Blanc, with a wider and mineral finish, reached by the depth of Alvarinho. A wine with a citrus color, aromatic with touches of asparagus and soft tropical, end of mouth persistent and mineral. Fish and shellfish, poultry and whole white meats. Soalheiro Mineral Magnum Rose

Our tradition was based on the neutral fermentation in stainless steel to obtain the base wine with more fruit intensity. Soalheiro Bruto Barrica ferments and staggers in used oak barrels for 12 months before the second bottle fermentation. This stage will give the sparkling wine a more evolutionary and intense aroma character, as well as a broader and more persistent good texture. The permanence in the basement, the low temperature and constant for 36 months allowed this sparkling wine to show all the elegance of the Alvarinho grape variety in a perspective of greater complexity and less fruit to which the sparkling classic Soalheiro has accustomed us.
