This wine is the result of an exercise of dedication, passion and art, as is the case with the ancient Arraiolos carpets, existing in Monte da Ravasqueira since the beginning of the 16th century and which are honored through the graphic elements on each bottle. . The Chardonnay shows refinement and freshness, the Arinto with exquisite acidity highlights the potential of the sandy-clay soil of Vinha das Andorinhas located in Pedreira de Vilarinho. To obtain the structure and preservation potential essential to this exceptional ElpÃdio Superior Sparkling Wine, only the juices from pressing the whole grape core are used, after separating the first and last extractions. The grapes are left to ferment for the first time, transforming the juice into base wine. Remaining in the tank allows the development of the complexity of the aromas and the structure of ElpÃdio Superior Sparkling Wine. The elegance and delicacy of the aroma suggest soft notes of white-fleshed fruits, reminiscent of pear and apple, with light citrus fruit and some toast. Alvarinho single-varietal sparkling wine, citrus yellow in color, with fine bubbles and persistent string. It presents a good balance between acidity and alcohol, where the fruity aroma of the Alvarinho grape persists. It should be served between 8ºC and 10ºC, being ideal to accompany roasts, red meat, suckling pig, cheeses and oysters. This superior quality sparkling wine comes from Alvarinho grapes harvested on a small plot, located at an altitude of between 300 and 350 meters, aged close to 20 years, protected from north winds and on granite soils. providing the development of small berries, with a thick skin and slow maturation, in order to preserve all the aromatic complexity of the grape. These grapes are harvested earlier so that the total acidity is higher and its probable level is no more than 11.7%, resulting in a fresh, light sparkling wine, with fine and persistent bubbles. Stage in cellar for 1 year in contact with the lees. Citrine yellow color, discreet aroma, with toasted notes on a citrus background. Typical acidity of the variety, with buttery nuances.

Aged in the cellar for 1 year, in contact with the lees. Total destemming, gentle pneumatic pressing, natural static decanting and alcoholic fermentation at 16°C, to obtain the sparkling base wine.
