Cálem 20 Anos Tawny
Harvested by hand at their optimum, the grapes are de-stemmed, crushed and vinified according to a process that is based on a careful maceration with color extraction, tannins and flavors of the films, complemented by permanent reruns during fermentation. This takes place in mills, at a controlled temperature between 28-30ºC, until reaching the desired Baumé degree. At this stage, wine spirits (benefit) are added, giving rise to a fortified wine. High quality wine, obtained by stocking wines from harvests of several years, in order to acquire a complementarity of organoleptic characteristics typical of this old tawny style. The 20 Years Tawny Cauldron is a wine that reflects the art of the lot, and results from the careful combination of aged wines in oak casks, with an average age of 20 years. Brown color with greenish reflections. Concentrated nose, voluptuous, where the woody aromas predominate, notes of honey and delicate nuances of spices. On the palate it is magnificently structured, with firm and polished tannins. Soft, sweet texture with excellent persistence and a very spicy finish. Contains sulfites.

Martha’s 20 Year Old Tawny Port is considered the “jewel of the family”, a greater port in all meanings. Quinta de Ventozelo Rose
Manual harvest during the month of September for 25 kg boxes. After sorting the bunches in the vineyard, the berries were also chosen by optical sorting at the entrance to the cellar, so that only the perfect berries were used. These were then refrigerated, destemmed and pressed in an inert environment. Subsequent cold decanting and fermentation took place at a temperature of 16ºC. Stage in stainless steel vats. Soft in color, pale pink with red nuances. It shows an intense and fresh aroma of red fruits, especially raspberries, with light vegetable notes. Acidity elegantly balanced with the volume in the mouth, making it a very appetizing rosé. Contains sulfites.

Messias Colheita 1963 Tawny
Fermented wine with partial destemming at a controlled temperature (24-28ºC) when the wort reaches the desired sweetness value, the fermentation is interrupted by the addition of brandy (77%), then staggered in oak wood for a minimum period of 7 years , in the warehouses in Vila Nova de Gaia until being bottled. Amber wine with greenish glints, an intense, exquisite and very complex Port, combining notes of nuts (almonds, hazelnuts), with balsamic and spice suggestions. Vigorous but quite elegant, with remarkable freshness to define an endless mouth. Contains sulfites.

A batch of six of the most traditional grape varieties from the Douro, Touriga Nacional, Touriga Franca, Tinta Roriz, Tinta Barroca, Tinta Amarela and Tinto Cão. Quinta dos Murças VV47 has a very complex, intense and lively aroma, where the most mature red fruits, the characteristic balsamic aromas of the older vines and the notes of spices from the barrel stage stand out. After manual harvesting, rigorous selection and total destemming, the grapes macerated for about a week in vats and presses with a pneumatic crusher at 27ºC. At the end of the malolactic fermentation, the wine matured for a long time in stainless steel and cement vessels. It was bottled after minimal clarification. Garnet color, complex aroma, with fruity, spicy, roasting and dry vegetable notes. Structured, fresh, full-bodied and long flavor. With tannins present but tamed. Contains sulfites.

Deep red color, in the nose exalts the aromas of black fruit of the forest, with touches of violet and nuances of black pepper. On the palate there is an explosion of ripe fruit combined with a high freshness, with very good tannins that give it immense life and prolongation of the mouth, a characteristic that increases its potential for aging, although it can be consumed already. Manual harvest. Reception with total destemming and immediate crushing, fermentation in small stainless steel vats, with fermentation at 24 ºC. Controlled macerations in order to obtain elegant and smooth wines. Partial stage for a short period of 3 months in American and French oak. Aromas of red fruits and spices reveal a gentle maceration in order to preserve the typical notes of the grape varieties and make the wine ready to be drunk after bottling. Very typical aromas of Douro grape varieties, sweet notes of rockrose, flowers, blackberries and spices contribute to its aromatic complexity, in the mouth it is very smooth, with balanced acidity, very fine tannins. Manual harvesting, reception with total destemming and crushing immediately, the grapes are fermented by grape varieties and batches, so that from a very early age a rigorous selection can be made that will later give rise to the “blend”, very traditional from the old world, reveals the art of selecting grapes by parcels and the art of selecting wines for blending. Fermentation takes place in small capacity stainless steel vats, with temperatures around 28 ºC. Smooth and controlled macerations in order to obtain elegant and aromatic wines. Part of the lot is aged for a period of 12 months in predominantly French oak, with a small percentage of American wood. Intense aroma of great complexity, aromas of forest fruits and cistus from Touriga Franca, spices and red fruits from Tinta Roriz and very fresh and elegant violet floral notes from Touriga Nacional. In the mouth it is sweet and enveloping, with very smooth noble tannins, long and warm finish. Contains Sulfites.

From the balance of more mature vineyards with more fresh vineyards, is born Casa da Passarella A Descoberta WIne Red. Coming from the Dão region, this wine is based on the traditional varieties Tinta Roriz, Alfrocheiro, Jaen and Touriga Nacional. The winemaking takes place in a winery, where we intend to express the added value of our terroir. In this sense, one of the measures we take are the fermentations that occur with the selected yeast in our vineyards, a tradition of the house that dates back several decades. The stage is made in traditional cement tanks, and a small percentage in used barrels. Contains Sulfites.
Quinta de Chocapalha Red
The grapes, previously destemmed, underwent a pre-fermentative maceration at low temperatures for 12 hours. The alcoholic fermentation was done in mills, with temperature control, not exceeding 27ºC, during 10 days, with the use of robot to step. The wine aged for 18 months in second and third use French oak barrels. Deep color of violet tonally, with good concentration in the nose. Rich in aroma, with notes of ripe black fruit and spices combined with floral notes. In the mouth it looks elegant and fresh, with an excellent tannins-acidity combination, and a long, smooth and elegant finish.

Quinta da Falorca Traditional Blend is produced with 33% Touriga Nacional, 28% Rufete, 21% Jaen, 12% Alfrocheiro and 6% Tinta Roriz. It was aged in French oak and stainless steel barrels. It is a very aromatic and tasty red, which has a medium body and soft tannins in the mouth. It has great aging potential. Contains sulfites.

Total destemming, gentle crushing and thermal shock, followed by a period of cold pre-fermentative maceration in the mill for about 12 to 24 hours. Malolactic fermentation occurred naturally, part of the wine carried out this fermentation in wood. On the nose, very fresh and intense where the notes of wild fruits and black cherries predominate in balance with seductive “nuances of Liquorice”, the aroma being complexed by the notes of wood. In the mouth it is concentrated, warm, with firm tannins and smooth texture, a very intense and persistent finish showing the strength of Douro Superior wines. Contains sulfites.

Maceration for 8 days at 22ºC. In the nose very fresh and elegant with notes of wild fruits and black cherries in balance with seductive nuances of "liquorice", the aroma being complexed by the discreet notes of wood.
