Ribeiro Santo Encruzado Magnum White
The grapes, exclusively from the Encruzado variety, were harvested manually in the second week of September for small boxes of 18 kg, according to a careful selection of the best grapes in the vineyard. The decanted and pressed grape must decanted at low temperature in small stainless steel tanks for 48 hours. After being cleaned it was fermented in French oak barrels of 500L. During the fermentation was done battonage, the wine remained in the barrels for another 5 months. Color clear, with greenish citrus lavas. Delicate aroma with notes of lemon, green apple and dried linden flower. In the mouth we find the same fresh fruit and the typical crusty minerality in balance with fresh acidity.

Ribeiro Santo Encruzado White
Harvest by Hand. Grapes from a single vineyard of Encruzado grape variety, from the Ribeiro Santo Estate. Total destemming and pressing. Selection of the grape must and cooling at low temperatures for 24h. Fermentation only in stainless steel vats, with temperatures rounding the 15ºC for 20 days. 50% of the wine fermented in new French oak barrels for 4 months. Clear color, with green shades, this wine shows the authenticity of the grape variety Encruzado in a fresh and elegant way. Pear and white flower notes on the nose. With medium body on the palate, and good structure due to the barrel toast, balanced by the crispy acidity and the citric character. Contains Sulfites.

The Buçaco were, and still are, always vinified in the same way and with the same methods of old. The fact that the grapes originate in the regions of Dão and Bairrada guarantees a great wine, which develops in a noble bottle. These wines ferment and stagnate in French oak barrels for 12 months. A white wine that reveals its aging time and maturity. Crunchy and mineral acidity of a very enigmatic wine. Wine with a yellowish color with golden tinges, in its aroma are well present lemon and linden combined with notes of exotic fruit. Manual harvest. Total stalking. Pre-fermentation maceration for 8 to 12 hours. Vacuum press, fermentation at controlled temperatures (15ºC to 18ºC) in stainless steel vats for 10 to 15 days. Internship for 3 months sur lies. Citrus yellow color, intense aroma of tropical fruits, with hints of vanilla and light mineral. Good mineral. Citrus finish and very persistent. Very clear with green reflections. Aromas of great fineness evolving with citric notes, white fruits and flowers. Perfect to accompany grilled fish or with sauce, seafood, oysters. Contains Sulfites.
Château Les Justices Sauternes White
Sauternes, 40 miles south of Bordeaux city, is a village famous for its high-quality sweet wines. The Sauternes of Chateau Les Justices have always been highly appreciated by the best French restaurant for the high quality regularly maintained over time, Sauternes is a very long-lived. The vineyards are located in the municipality of Preignac, ideal environment for the development of noble rot (Botrytis Cincerrea), the vines have an average age of 25 years. The soil is stony (Graves) mixed with sand characterized by a clay part; subsoil consists of a layer clay-limestone which rests on the rock. The harvest is manual. Fermentation takes place in temperature controlled stainless steel tanks and lasts about three weeks. Followed by aging in vat at first, then in new oak barrels for 12/18 months.

The Real Companhia Velha Espumante Rosé Crude is the result of a careful selection of Pinot Noir from Quinta de Cidrô in São João da Pesqueira. A sparkling wine with a light pink color, with excellent expression on the nose, with floral notes and delicate nuances of red fruits, showing intensity and complexity. In the mouths, it shows volume, but a lot of elegance and finesse, with flavors that can be guessed in the nose, and a lively and refreshing acidity. Contains sulfites.

Alcoholic fermentation conducted at 18ºC, weekly “batonnage” on total lees. In the final batch we added 25% of fermented wine in 500 liter barrels. Very intense and complex aroma, white-fleshed fruit, floral, mineral, citrus. In the mouth it shows amplitude, vibrant acidity very well integrated. Very long and persistent finish. Gentle pressing of the grapes and fermentation at controlled temperature. The Maria Gomes variety ages in stainless steel vats for 9 months. The remaining varieties are aged in French oak barrels of the second year for 9 months, with weekly batching. Clear and straw yellow in color, this wine is deeply aromatic. The citrus aromas and notes of tropical fruit can be distinguished. An elegant acidity enhances the velvety texture of this wine, making it fresh, mineral and intense, with a long and lasting finish. PAÇO DE TEIXEIRÓ Avesso White
Grapes from a plot of the Quinta, the Corredoira vineyard. All grapes are hand-picked in 20 kg boxes. After a partial destemming and slight crushing, they go to the press where there is a slight contact between the skins and the must. Soft pressing and fermentation at medium/high temperatures in stainless steel vats. Finished fermentation in French oak barrels of 300 liters. Aged in barrels with total lees, with batonage, for 6 months. Vineyards with an average age of 35 years. Straw color, very complex and deep aroma. A lot of minerality with a light smoke, reveals citrus and fresh notes. Elegant and balanced palate, aromatic, with good volume and a very fresh and mineral finish. Contains sulfites.
Titan of Douro Fragmentado White
Fresh grapes at their ideal point of maturation, picked by hand into 20 kg boxes, are transported to the cellar where they were subjected to a careful manual selection. They are destemmed, crushed and macerated for 48 hours, followed by French oak barrels, where they ferment and stash. This wine is a batch of wines from several years. It presents an intense straw color. Aromas of bread, honey, grapefruit, white flowers and wet stone. In the mouth it is a wine filled with layers, very voluminous and full of energy given its persistent freshness. Contains sulfites.

Manual vinification, pressing very slowly to respect the fruit. Aging in stainless steel for 7-8 months. Throughout the aging process, decisions are made only after careful evaluation of taste. The data obtained are supplemented by technical analysis. As with all other Joseph Drouhin wines, the absolute priority is given to the true expression of terroir and character of the vintage. A dry and lively wine, typical of Chablis. Bright yellow-green color with green reflections. In the nose, complex aromas and minerals resemble lemon and white flower along with vegetable notes such as asparagus or artichokes and marine notes. In the mouth, the first impression is clear and crisp, with a long finish, with fruity and mineral flavors, with a slight honey aroma when the wine is more evolved. Contains Sulfites.

Grapes grown from some of the most choice land in the surrounding region of La Motte en Provence, consisting primarily of Grenache, Cinsault and Vermentino. Harvesting at sunrise to noon. The grapes which are used to make Whispering Angel are sorted optically. Destemming and slight crushing at 7-8ºC to avoid oxidation. Both the free run juice and pressed juices are vinified in stainless steel. "Batônnage" is twice weekly. Temperature controlled. Contains sulfites.
