100% of this wine is aged in wood for 10 months, in 25% new wood. Fermented in conical stainless steel vats for 7 days, with temperature control, after which malolactic fermentation takes place. This Syrah wine reveals notes of fresh black plum with nuances of ripe blue fruit on a relatively intense palate, with a markedly mineral backbone in a set full of spices. Contains sulfites.

Fermentation of each variety individually in stainless steel tanks with controlled temperature. Citrus color with greenish hints. Aroma of tropical fruit, fresh and floral. In the mouth it is fruity, has good acidity and a refreshing finish. Contains sulfites.
Quinta das Bágeiras Colheita White

The Quinta das Bágeiras white harvest wine comes from vineyards with little more than 15 years. It is vinified by an ancestral process, the wort being placed in small open decanters of 1m2 where it remains between 24 to 36 hours to make the decanting through natural precipitation. At the end of this process, the wort is tranferred to stainless steel tanks where it ferments, with a temperature control made with cooled water drop. It is a wine that ferments only with indigenous yeasts, proper of the graoe, without any addition of enzymes or extra yeasts. Contains Sulfites.
José de Sousa Puro Talha Red

In the cellar José de Sousa still some ancestor techniques of vinification are used, being the most emblematic the use of the carving in the fermentation of the grapes. The essence of small-scale winemaking has changed in over two thousand years. In this process, the grapes previously crushed on foot are stoned by hand on a ripening table. The fermentation takes place with 30% of the stalks, in hoists with an average capacity of 1,600 liters at a temperature that is around 28ºC, being controlled by watering the hoists 4 times a day. The fermentation takes approximately 8 days, leaving the wine in maceration after fermentation until November. After the pressing of the masses, part is staged in hoists for a period of around 16 months in which an olive oil film is used to prevent oxidation. The other part was stamped on 500-liter brown casks. At the same time, the rest of the stall was fermented in a "task" (small carving with capacity of 300 liters) with a little must. This product is called ripening wine because it is the result of this ancestral technique of manual destemming. This wine is used in the final lot as "salt and pepper". Color reddish brown, aroma of nuts, spices (black pepper, cloves), clay, liqueur, evolved but not oxidized. Taste robust, dry, good acidity, very balanced, tannins present but soft. Long and persistent end of test. Contains Sulfites.
Monte Meão Vinha dos Novos Red

After crushing the grapes undergo a thermal shock followed by foot walking for four hours in granite winches. After this process the grapes are transferred to small French oak barrels where they ferment for about 10 days. The stage takes 15 months in used barrels of 225 liters, French oak. Excellent color, very lively. A very floral nose with citrus notes. In the mouth your floral profile stays and enchants with its softness. In the mouth it presents an extraordinary elegance, excellent acidity, with tannins present, but fine. Contains Sulfites.
