Long post-fermentation maceration. Aged in 500l oak barrels for 19 months. Wine not filtered or stabilized by cold. Can create deposit. Very intense red color. Intense aroma with complexity and aromatic subtlety. Noteworthy are the wild berries, the red fruits with stone and floral aromas. Notes to coffee, chocolate and tobacco give even more elegance to the set. Wine with a balanced acidity that gives elegance and lightness. In the cellar José de Sousa, some ancestral techniques of vinification are still not used, the most emblematic being the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this process, the grapes previously stamped on foot are stripped by hand on a table called a "ripening table". Then, part of the must, the films and 30% of the stench are fermented in the clay hoards. The rest is fermented in mills. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months of aging in new French oak wood. It has a red color with brownish highlights. Aroma to dates, green tea, dried figs, a little peppermint, well integrated oak wood. Fruity palate, soft, elegant, soft tannins. Long test field.

Maçanita Vinha Centenária White

Produced from a vineyard over 100 years old where Arinto dos Açores dominates, but there are also Verdelho, Boal (Malvasia Fina) and Alicante white (Boal de Alicante). Harvested by hand, selection on a selection table, direct press, cold decanted 12h, first presses vinified in stainless steel in a horizontal vat, 2nd presses fermented in French oak barrels for 3 years of use, without batonnage for 9 months. Yellow citrus-straw color, iodine aroma, salt, linden. In the mouth, dense concentrated attack, acidity cuts in half and remains until the end of the tasting, salt and iodine, it is a sea slap. Quinta do Vallado Reserva Field Blend Red

Some of the grapes were subjected to the traditional process of milling, while the rest were vinified in five-ton stainless steel tanks with controlled temperature and robotic reassembly. After the malolactic fermentation, all the wines were transferred to French Allier oak barrels where they remained for 18 months. 60% staged in new barrels, 40% in used barrels. Quinta do Vallado Reserva Field Blend has a very concentrated aroma, with balsamic notes of oak, fig and blackberry, tobacco. Flavor very full-bodied, fleshy with ripe and round tannins.
