Produced using traditional methods, the manual harvest of the selected grapes is followed by cooling to 5ºC, de-stemming, and careful skin maceration. Half of the fermentation takes place in stainless steel and is completed in French oak barrels, where the wine matures for 12 months on the lees, enriching its complexity.
Conde Vimioso Vinha do Convento White has a bright citrus color and an intense aroma of citrus fruits, such as lime and grapefruit. On the palate, it is complex and structured, with a lively acidity that brings freshness and persistence, culminating in a long finish where mineral notes and a soft smoky touch predominate. Cultivated with dedication on an exclusive 1-hectare plot, part of a majestic 8-hectare vineyard planted in 2016, this rosé comes from a generous slope, at an average altitude of 450 meters, facing east, where the 35% slope and the Granitic soil combine to create ideal conditions. Meticulously harvested on August 22nd, the grapes for this Pinot Noir Rosé are transformed through careful alcoholic fermentation in stainless steel vats, ensuring the preservation of all their qualities. Manual harvest in 15 kg boxes. After a pre-fermentation maceration at low temperatures, the grapes are pressed and the must clarified.
