Quinta dos Muros M7 Red

Manual harvest. Grapes transported in pallets. Maceration in small mills at a temperature between 24 and 26ºC. Use of gravity techniques for grape movement. Aging for 22 months in new French oak casks. This is the first wine from the old vineyard plot (M7) of Quinta dos Muros. The wine that determined that this parcel should be preserved. It is the result of 27 varieties, and a lot of care and passion throughout the process. A red that deserves attention when you have it in the glass. Contains sulfites.

After manual harvesting, the grapes were transported in boxes of 18 kg capacity so as not to harm the integrity of the bunch. Once in the cellar, the boxes were unloaded onto a sorting mat for the first sorting of the grapes. This was followed by destemming, choosing berry by berry and crushing them, which were transported by gravity to a pneumatic press. After clarifying the must, alcoholic fermentation began in stainless steel tanks at low temperatures of around 12ºC, in order to preserve all the varietal character of the variety. Alcoholic fermentation took place for approximately 20 days, where the different components then staged for 8 months. It is a light salmon colored wine. In the aroma, it presents notes of very fresh red fruit, such as strawberry, fresh cherry, light currant and floral. In the mouth it is slightly structured with a lot of freshness to balance the entire tasting.

Night harvest, under the luminosity, brightness and company of the moon. Fermentation in barrels, under a temperature control. The wine is then subjected to a battonage process. Aromatically intense, this white immediately brings us to the tropical expression of Antão Vaz, pineapple, mango and apricot. In evidence, Viosinho reigns, bringing to us the expression “Winter”, where acidity and minerality, freshness transmit life to the group. This Winter White is aged in Hungarian oak barrels for a period of 6 months, where it acquires structure, volume and elegance, making this wine a wine with an enormous gastronomic aptitude. From the balance of more mature vineyards with more fresh vineyards, is born Casa da Passarella A Descoberta WIne Red. Coming from the Dão region, this wine is based on the traditional varieties Tinta Roriz, Alfrocheiro, Jaen and Touriga Nacional. The winemaking takes place in a winery, where we intend to express the added value of our terroir. In this sense, one of the measures we take are the fermentations that occur with the selected yeast in our vineyards, a tradition of the house that dates back several decades. The stage is made in traditional cement tanks, and a small percentage in used barrels. Contains Sulfites.

In 2015 we enjoyed long and slow maturations that our older strains and our best plots have taken advantage of to provide grapes with an exemplary balance between acidity and tannins. The two grape varieties that benefited most with the exceptional goodness of nature were Syrah and Alicante Bouschet, providing grapes in perfect maturity. With raw material so good we prefer to work them little, letting the grapes speak for themselves. That's why we did little more than one walk on our wineries, according to the most traditional methods of the region, followed by a stage in new barrels and barrels of second year of French oak, letting the wine express itself in the purest form .
Very fleshy red color. Tense and closed, concentrated and powerful, floral and fruity, it ends with some earthy notes that add complexity. Silky and velvety in texture, it is an intense and structured red, vigorous but not aggressive, complex and elegant, fresh finish and great guarding potential.
