After selecting the grapes from our associates' vineyards, the grapes that will be the raw material for this wine are manually harvested. Arrivals at the winery are unloaded and immediately de-stemmed and crushed, followed by pre-fermentation maceration for 48 hours and alcoholic fermentation at 23-26ºC using pumping over and delestage, total maceration for 15 days. Aging in new French oak barrels for 18 months. After bottling, the wine ages in bottles for 6 months in our cellar. Wine with a crystalline appearance, opaque ruby color with great aromatic depth, suggesting ripe black fruits, spices and cocoa wrapped in floral notes. Structured, intense and engaging with robust tannins that guarantee a pleasant finish and excellent persistence. Contains sulfites.

In the cellar José de Sousa, some ancestral techniques of vinification are still not used, the most emblematic being the use of the carving in the fermentation of the grapes. The essentials of small-scale winemaking have changed in recent centuries. In this process, the grapes previously stamped on foot are stripped by hand on a table called a "ripening table". Then, part of the must, the films and 30% of the stench are fermented in the clay hoards. The rest is fermented in mills. The use of cutlery confers spices and a third dimension to wine. After fermentation, the wine has a skin maceration of 4 weeks, followed by 9 months of aging in new French oak wood. It has a red color with brownish highlights. Aroma to dates, green tea, dried figs, a little peppermint, well integrated oak wood. Fruity palate, soft, elegant, soft tannins. Long test field.

The harvest is made in mid-August, with a total destemming of the grapes. Fermentation occurs in stainless steel vats, with controlled temperature, followed by a skin maceration for 1 week, without any mechanical extraction. The wine was aged for 6 months in used French oak barrels and 6 months in bottle.

Aging for 6 months in French oak barrels. Selection of grapes in the cut and transport in boxes directly to the cellar. Vinification with crushing and total destemming. Fermentation in an open press with controlled temperature. A perfect blend, very lively and young red fruit. The floral and fresh character stands out, which in conjunction with sweet aromas that result from a short period of aging in wood, gives it some complexity and harmony. In the mouth it is full-bodied, with a fresh and persistent finish, showing a good balance between natural acidity and structure. The mineral character of the Region is very present in the freshness of the wine. Contains sulfites.
