100% Touriga Nacional grape variety. A special parcel in our Quinta do Ribeiro Santo. Harvest by hand. Total destemming and decanting at low temperatures for 24h. The first fermentation happened in a stainless steel vat. An in-tank batonnage was followed for 3 months. The second fermentation followed the traditional method of fermentation in bottle, which was held in a cool cellar for 24 months. Light and refined salmon color. Delicate and engaging aromas of apricot, some tangerine and slight toast. Lovely harmony between acidity and structure. Fine bubble offering complexity and freshness. José de Sousa Puro Talha White

At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of the mulch in the fermentation of the grapes. The essence of woodcarving winemaking has changed little in more than two thousand years. In this process, the white grapes are slightly crushed by foot and manually destemmed on a ripanço table. Fermentation takes place, without stems, in pots with an average capacity of 1,600 liters at a temperature of around 28ºC, being controlled by watering the pots 4 times a day. Fermentation takes approximately 8 days, leaving the wine in contact with the masses. Aged in amphorae for a period of 4 to 10 months, depending on the vintage. During this period, a film of oil is placed to prevent oxidation. Amber color, aroma of dried fruits, especially hazelnut. Spices, evolved, white pepper, ripe kiwi, bread, liqueur, hay. Elegant, complex palate, good acidity with a dry finish. Long and persistent finish. Contains sulfites.
Soalheiro Primeiras Vinhas White

The Alvarinho grapes, produced according to the concepts of organic farming where we protect the wine-growing ecosystem, promoting biodiversity and environmental sustainability, are harvested manually in the older vineyards with more than 40 years of existence in Quinta de Soalheiro, the First Vineyards. Currently, we still have a selection of Alvarinho grapes planted in Pé-franco. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation at controlled temperature. The fermentation takes place essentially in stainless steel (about 15% of the total volume is fermented in used oak barrels), with maintenance of the fine lees until the beginning of May, the month in which the bottling takes place. In this harvest we also integrate into the Alvarinho lot with a large oak kite stage. Citrine yellow color, elegant and full aroma that grows in the glass, becoming more and more persistent. The flavor is full-bodied, fresh and with great gustatory complexity. Contains Sulfites.
