Quinta da Carolina Xisto Amarelo Red

Ferment in a cement mill, whole bunch with the traditional Douro tread. During fermentation, extraction is minimal, as are all interventions in this wine. It ages in a 1000 liter German oak foundre, over 50 years old, for 1 and a half years and is bottled by hand without filtering or sticking and with minimum levels of sulfites. Of dense violet color, typical of a fermentation with a lot of Touriga Franca in a wine press, the Yellow Schist is very floral on the nose, with some notes of rock rose and pink pepper. In the mouth it contrasts very fresh, black fruit of the forest and some white pepper with a mesh of firm tannins that make the finish very persistent. Contains sulfites.

Mr. Amílcar chose to ferment this white wine, an Arinto from Quinta de Arcossó, directly in the Vidago region, 450 meters above sea level in Trás-os-Montes (Ribeira de Oura). He adopted a unique approach: 80% of the fermentation took place in stainless steel tanks with 'bâtonnage', while the remaining 20% was fermented in French oak barrels. After this process, this delicious Arinto was aged in bottles for 30 months.
Enhance the flavor of this white wine by decanting it for an hour before serving.
Quinta de Arcossó, located in Trás-os-Montes, is a wine project dedicated to artisanal wine production. Using a minimalist winemaking approach, inspired by ancient techniques dating back to Roman times, the farm produces distinctive wines known for their notable acidity, ripe fruit and robust tannins. Quinta do Vallado Touriga Nacional Red

Each plot was harvested manually and vinified separately in stainless steel vats with controlled temperature and reassembly. After malolactic fermentation, all wines were transferred to 225 liter French oak barrels where they remained for 16 months. Of the barrels used, 50% were new and the remainder were 2nd or 3rd year. Typical aroma of ripe Touriga Nacional, bergamot, wild fruits, with floral (violet) and spice nuances. Elegant flavor, with lots of fruit and surrounding tannins. Long and very fresh aftertaste. Contains sulfites.

Hand picked grapes, selected on a choice of carpet, the fermentation takes place in stainless steel vats, where maceration (manual reassembly) allows to extract all that good grapes can give. Characterized by red fruits, raspberry and cherry, the terroir of Roriz also inscribes a mineral touch and appealing spice notes. Ideal for new consumption. It has the potential to work in bottle for a few years.

Château Les Justices Sauternes White

Sauternes, 40 miles south of Bordeaux city, is a village famous for its high-quality sweet wines. The Sauternes of Chateau Les Justices have always been highly appreciated by the best French restaurant for the high quality regularly maintained over time, Sauternes is a very long-lived. The vineyards are located in the municipality of Preignac, ideal environment for the development of noble rot (Botrytis Cincerrea), the vines have an average age of 25 years. The soil is stony (Graves) mixed with sand characterized by a clay part; subsoil consists of a layer clay-limestone which rests on the rock. The harvest is manual. Fermentation takes place in temperature controlled stainless steel tanks and lasts about three weeks. Followed by aging in vat at first, then in new oak barrels for 12/18 months.

Grapes from old vines of the Planalto Mirandês, at more than 600 meters of altitude, with schist soils. Manual harvest in 20Kg boxes. Reception with partial destemming and soft crushing. Fermentation with indigenous yeasts in stainless steel vats, without too much extraction. Aging for 12 months in old Portuguese oak barrels. Open ruby color, translucent. Delicate aroma with fresh red fruits in the first instance, expanding to a slight smoke. Very fresh and light in the mouth with very complicated acidity and tannins, long and mineral finish. Contains sulfites.
