With grapes from the Douro Superior, namely from a 60-year-old vineyard, from the selection of red grapes from native varieties. A wine as it used to be, with structure, body and freshness.
After manual harvesting, and transport to the cellar in small boxes (18kg-20kg), the grapes are trodden by foot in a small press. Fermentation started spontaneously and then it was pressed.
It fermented the rest of the time in used 225L barrels. Aging: 6 months used barrels. This wine has a red fruit aroma like strawberries. Fresh, light and appetizing wine. Contains sulfites.

Chão dos Eremitas Os Paulistas Red

The Paulistas, name given to the Hermits of the order of São Paulo who made their wine in this place for so long, that this date was lost in the memories. However, the Papal Bull of 1397 exempted “Os Paulistas” from taxes on their vineyards, demonstrating the importance of this location. The place is special and receives two streams that bring water from Serra D’Ossa and keep the water nearby and the soil fresh, with no need for watering for the good development of the grapes. The grapes, also from another time, planted in 1970, Tinta Carvalha, Moreto, Castelão, Alfrocheiro and Trincadeira, demonstrate that there was another Alentejo, without irrigation and without improving varieties. An Alentejo worth recovering, this is our tribute to the Paulistas. Nocturnal manual harvest, selected on a sorting table, 30% whole bunch and 70% destemmed, falling by gravity into the vat. Spontaneous fermentation and maceration between 25 and 40 days, followed by an 18-month aging in French oak barrels with more than three years. Ruby color with some violet touches, medium concentration. On the nose, lots of red forest fruit, some undergrowth. Fresh attack, good fruit with hints of pomegranate. Very thin, long and with structure.

Manual harvest for 12kg boxes. Cooling of the grapes in a cold room for 24 hours to 10ºC. Manual selection on a vibrating sorting table, followed by destemming and crushing. Vacuum pressing, followed by cold decantation for 48h. Fermentation of each variety individually in stainless steel tanks at controlled temperature, for 20 days. Greenish hue, clear and bright. Very fine in the aroma, with good citrus fruit notes and a light tropical note. Creamy mouthfeel, marked by expressive fruit and supported by refreshing acidity. Contains sulfites.
Soito Reserva Alfrocheiro Red

The winemaking is classic in stainless steel vats with smooth skin maceration. Fermentation is controlled up to 26ºC for 9 days. The aging is done in French oak barrels for 6 months. Clear appearance, strong red color with hints of garnet, reveals a deep and elegant aroma of very ripe red fruits, where the notes of plum, blueberry and cherry stand out combined with soft expressions of fine vanilla, spices and dried fruits, married with a light fragrance. balsamic and faint breath of pine forest. In the mouth it shows outstanding complexity, it is round and harmonious, with good structure and balance of well integrated tannins, promising a good aging potential. It reveals a long persistence and an exquisite bouquet, showing the character of its terroir and the personality of the grape variety. Contains sulfites.
Castello D’Alba Moscatel Galego White

Manual harvest for small perforated boxes of 20 kg, soft pressing of the whole bunches without destemming, in order to preserve the integrity of the grapes as much as possible, natural fermentation with indigenous yeasts at a controlled temperature between 16-18ºC in order to obtain the maximum expression of the combination of caste, soil and climate. After alcoholic fermentation, the wine was in contact with the fine lees, having been raised and stirred for about a month in stainless steel vats in order to gain creaminess and volume in the mouth. After bottling, the wine aged in bottle for 3 months before being placed on the market. It presents an intense aroma, of mineral character in balance with floral notes of roses and violets in harmony with aromas of tangerine and grapefruit peel. Acidity and freshness with fruit dominate the palate, very long and creamy with very fresh acidity. Contains sulfites.

After skin contact and pressing, the clean must fermented at 14ºC. After fermentation, the wine aged in the vats for 2 months with batonage.
