The grapes were harvested by hand and gently pressed in a pneumatic press after the wine decant for 24 hours. 90% was fermented with temperature control and 10% in French barrels. Passadouro DOC Branco is a very elegant and fresh wine. Great expression of well-fruity fruity notes with white flowers. In the mouth we find a crunchy wine with good acidity and balanced body. The harvested grapes rested for 24 hours in a refrigerated container at 8º C in order to protect the integrity of the bunches. Following selection on a mat of choice, 30% destemmed and 70% whole bunches were introduced into the vat, allowing the extraction of color and aroma compounds more smoothly during 3 weeks of alcoholic fermentation entirely in stainless steel vats, having completed the malolactic fermentation. in stainless steel. After aging 50% of used 4-year-old barrels of 400 L and 225 L of French oak, where it remained for 12 months. Wine with a deep ruby-violet color, aromas of rockrose surrounded by notes of forest fruits in a typical Douro setting. Ribeiro Santo Touriga Nacional is a concentrated wine, ruby color with violet lavas. Expressive aroma with blackberries and cherries, field flowers and notes of spices. Medium body, mineral, with a good acidity to give freshness, fine tannins and final firm and spicy. The harvest took place at the end of September. The grapes were harvested manually, for small boxes of 18 kg, according to a careful selection of the best grapes in the vineyard. The grapes were completely destemmed for small stainless mills, where they macerated 24 hours at low temperature, before beginning the alcoholic fermentation, with indigenous yeasts at controlled temperature. The alcoholic fermentation lasted about 15 days, with gentle remonstrances for a good extraction of color and aromas. After fermentation, it was transferred to new French oak barrels, where it remained for 12 months until bottling. Contains Sulfites.
