The grapes were harvested manually and transported to the cellar where they were destemmed. Alcoholic fermentation took place in stainless steel tanks at 26–27°C. After finishing, we kept the wine in post-fermentation maceration for 5 days. The malolactic fermentation occurred naturally in a stainless steel tank and then it was transferred to barrels where it remained for 18 months. Aged for 18 months in French oak barrels and 36 months in bottle. Powerful nose with notes of black fruit wrapped in spices and tobacco. In the mouth, the intensity of the freshness of Cabernet Sauvignon stands out, followed by the creamy texture of Alicante Bouschet, which leads us to an elegant and persistent finish. Textura da Estrela Red comes from 3 different vineyard plots, all of them in Vila Nova de Tazem (Serra da Estrela sub-region). In 2018, it was a lot composed of Vinha Velha (35%), Touriga Nacional (30%), Jaen (20%) and Alfrocheiro (15%). Vineyards aged 25 to 60 years in granitic soils, treated sustainably and without herbicides, have been converting to organic certification since 2020. On the 25th and 26th of September, the grapes were hand-picked, which after fermenting in stainless steel vats with 35 % whole bunch, stayed in cuvaison for 30 days of. Aging for 15 months in used French oak barrels and vats. Naturally stabilized. Red wine with great refinement and great freshness. It has mineral and earthy character, light pepper and some red fruit. It shows velvety and textured tannins, very fine and slightly spicy from the stem. Gastronomic when ordering food and a dry and prolonged finish. It ages to an even more elegant profile. Contains sulfites.

The grapes were vinified with total destemming, followed by soft crushing and skin maceration for about 12 hours. After this period in an inert atmosphere, pressing was carried out in a pneumatic press, followed by a period of clarification of the must, from 24 to 48 hours, depending on the variety and the state of maturation. The alcoholic fermentation took place at a controlled temperature between 12º and 14ºC. The wines aged in stainless steel on fine lees until bottling. A new wine from old strains.
