Grapes harvested by hand, for boxes of 25 kg, at their ideal point of maturation; intended to have a vigorous maturation, leading to higher aromatic and polyphenolic concentrations. After gentle crushing and total destemming, the grapes are fermented in stainless steel vats and wine presses, thus allowing the quality constituents present in the films of very ripe grapes to pass smoothly into the wine. After malolactic fermentation, the wine aged in used 300 liter French oak barrels for approximately 12 months. Purple and very deep color, very complex and distinct aromas where the fruity and floral character predominates, characteristic of the grape variety, with notes of spicy notes coming from the wood. In the mouth it shows fruit, complexity, great balance and harmony with high level tannins that give it a long finish. Contains Sulfites.

Hand-picked grapes, crushing immediately. Alcoholic fermentation at 18ºC with indigenous yeasts for approximately 20 days. Aging for 45 days on fine lees after alcoholic fermentation, 90 days of aging in bottle before launch. Intense, mineral, slightly smoked in balance with elegant notes of white flowers, citrus aromas such as grapefruit and lime, together with fruit trees with pulp. Classic blend wine from Dão, the Abanico Reserva is born from different vineyards of Casa da Passarella. The grapes that serve as base are the Touriga Nacional, the Alfrocheiro and the Jaen, and respecting the balance of the different plots chosen, we harvest the grapes manually for boxes of 12 kg. The fermentation takes place in traditional cement tanks and pre-fermentation and post-fermentation is done, the stage is partially made in new French oak barrels for a year, and the whole process of stabilization for bottling is done in a natural way - we do not subject this wine to any type of filtration.

Elegant and persistent aroma, with notes of wood well integrated and combined with the minerality of the wine. Good volume in the mouth (creamy), with a crunchy acidity and a fresh and long finish. This Encruzado comes from a plot at 500 meters altitude of granitic soil with lines of clay. After pre-fermentation skin contact and static decantation, fermentation took place in barrels (500/600L) with 5 years of use. The aging was very long (late release) in barrels without battonage or sulfur addition. Direct bottling without filtering or gluing. Contains sulfites.
