It reveals a bright, complex and luminous nose, where notes of white flowers, citrus and stone fruits are distinguished. Notes underlined by a slightly minty touch. In the mouth, it is a huge wine. Vintage 2008 is slim, elegant and toned. The fruit is pronounced loud and clear, and the acidity, a distinctive sign of this vintage, is remarkably integrated here. The finish evokes spice and finishes a touch of smoke. Contains sulfites.

Color is pale yellow. The bubbles, very light and abundant, rise regularly to form a thin layer of foam. The nose, very pure, opens a contrast between an already affirmed intensity and a finesse that is revealed by aromas of pear, queen-claude, white flower. The intensity, is expressed with the aeration by an aromatic richness and maturity demonstrative of a wine already in the expression of its potential. In the mouth, the attack is lively, frank, precise, dominated by flavors of crystallized lemon zest and fresh pineapple. The finish, sour, expresses a good length. Combining subtlety and aromatic intensity. Contains sulfites.
Drappier Clarevallis White

Clarevallis is the name given by Saint Bernard to the abbey he founded in 1115. Champagne Clarevallis is made with grapes from the hills of Urville, planted during the Cistercian period. The wines were vinified and aged in cellars built in 1152 by the monks of the abbey of Clairvaux: today, the cellars are owned by the Drappier family. Unfiltered, with very little sulfur (20 mg/l), the dosage used contains a liqueur made from organic sugar cane at 4g/l. A golden gray color with fine, persistent bubbles. Touches of elderberry and violet. The limestone minerality is softened by the pinot pulp. A harmonious balance between discreet dosage and lovely bitter flavors.
