Clarevallis is the name given by Saint Bernard to the abbey he founded in 1115. Champagne Clarevallis is made with grapes from the hills of Urville, planted during the Cistercian period. The wines were vinified and aged in cellars built in 1152 by the monks of the abbey of Clairvaux: today, the cellars are owned by the Drappier family. Unfiltered, with very little sulfur (20 mg/l), the dosage used contains a liqueur made from organic sugar cane at 4g/l. A golden gray color with fine, persistent bubbles. Touches of elderberry and violet. The limestone minerality is softened by the pinot pulp. A harmonious balance between discreet dosage and lovely bitter flavors.
