Alcoholic fermentation in a stainless steel tank, with controlled temperature. Stage on fine sludge for 6 months, with periodic batônnage. Obtained by the classical method, in the cellars of the Monastery of Cartuxa. Dégorgement after period of 5 years of stage in bottle. Contains sulfites.
