Luiz Costa Bruto White
After a very delicate pressing of the grapes, harvested between mid-August and the first days of September, the must fermented for 16 days in stainless steel vats at controlled temperature. The referral was carried out in a basement for 26 days at 15 ºC, followed by a 20-month bottle-aging period. Straw yellow color, aroma of citrus peel, dried flowers, light toast, butter cookie, and beeswax, among other aromatic notes of rich and complex palette. It has very fresh attack, and excellent texture. The mousse is creamy and has good taste persistence. Contains sulfites.

This gin by the Finnish distillery Shaman Spirits combines both tradition and the latest technology. Years ago, gin was a good resource to harden the long and cold winter, it was distilled for pleasure and served to the workers as compensation. This gin was made by distilling potato instead of grain. The botanics chosen are also different to the traditional ones, collected from pure and wild lands, giving this gin to personal and unique touch. The botanics include berries, vanilla, caramel, honey, liquorice and orange.

Grafting is born from the heterogeneity of the concept, since every year is different in edaphoclimatic conditions. From this differentiation, a wine was created based on the best behavior of the grape variety in the wine year. In the case of Casa da Passarella Enxertia Jaen, fermentation took place in a cement vat with spontaneous fermentation. 12 months in barrel and 18 months in bottle. The entire stabilization process resulted from mininmalist and natural processes. It is an opaque red wine, spicy notes of black pepper with vegetables. It presents a great balance with easy tannins of great smoothness. Long aftertaste. Contains sulfites.
Moscatel Horácio Simões Superior 10 Anos
Fermented in the cement cell the must and benefited with wine spirit soon after the beginning of the fermentation. Maceration during the winter (6 months) the wine is maintained with the pasta and then removed. The pasta is pressed and this press wine is separated. Internship since 1999 in wood. It has a dark topaz color, very intense aroma to Moscatel caste, floral, spices, raisins and nuts. Round, very soft and fresh flavor with very long finish. Contains sulfites.

Quinta da Falorca Traditional Blend is produced with 33% Touriga Nacional, 28% Rufete, 21% Jaen, 12% Alfrocheiro and 6% Tinta Roriz. It was aged in French oak and stainless steel barrels. Fresh in the mouth, floral notes of bergamot next to very attractive chemical notes. Very neat. Perfect with grilled meat, cod and cheese. Contains sulfites.
Quinta da Carolina Red
Careful selection of grapes in whole bunch for the cement mill where they spontaneously ferment at controlled temperature. After a maceration period of about a week, the grapes are picked and the wine continues its fermentative processes in 500 liter French and Austrian oak barrels. Aging for 24 months in French and Austrian oak barrels, followed by a year in stainless steel, where it stabilizes naturally throughout the seasons. Bottled manually, by gravity without filtering or sticking and with minimal SO2 adjustments. It is a wine with a little extracted profile, we look for the elegance and freshness that an old vineyard with exposure to the north can give us. Open ruby color, shallow, with herbal notes combined with fresh fruit on the nose, deep and persistent in the mouth, with Douro and wooden aging notes. A wine to enjoy while young, but clearly aging. Advisable for decanting. Contains Sulfites.
