Manual harvest for 20kg boxes. The grapes were carefully selected on a sorting table and then destemmed. Fermentation carried out in a mill with indigenous yeasts. Costa Boal Superior Red

Produced from Touriga Nacional, Touriga Franca, Tinta Roriz, Tinta Barroca, Sousão, harvested in Cabêda (Alijo) Cima Corgo and in Pocinho V.N. Foz Côa, Douro Superior. This Superior red aged in French oak barrels for between 16 and 18 months. It has a lively ruby color and complex aroma, large volume, lively acidity, very well integrated, and finely cut tannins. Tapada de Coelheiros Red

The grapes were harvested manually and transported to the cellar where they were destemmed. Alcoholic fermentation took place in stainless steel tanks at 26–27°C. After finishing, we kept the wine in post-fermentation maceration for 5 days. The malolactic fermentation occurred naturally in a stainless steel tank and then it was transferred to barrels where it remained for 18 months. Aged for 18 months in French oak barrels and 36 months in bottle. Powerful nose with notes of black fruit wrapped in spices and tobacco. After fermentation starts, the must was transferred to 500L barrels. The wine was kept in contact with fine lees. Aging for 8 months in barrels with battonage. José de Sousa Puro Talha White

At the José de Sousa winery, some ancestral winemaking techniques are still used, the most emblematic being the use of the mulch in the fermentation of the grapes. The essence of woodcarving winemaking has changed little in more than two thousand years. In this process, the white grapes are slightly crushed by foot and manually destemmed on a ripanço table. Fermentation takes place, without stems, in pots with an average capacity of 1,600 liters at a temperature of around 28ºC, being controlled by watering the pots 4 times a day. Fermentation takes approximately 8 days, leaving the wine in contact with the masses. Aged in amphorae for a period of 4 to 10 months, depending on the vintage. During this period, a film of oil is placed to prevent oxidation. Amber color, aroma of dried fruits, especially hazelnut. Spices, evolved, white pepper, ripe kiwi, bread, liqueur, hay. Elegant, complex palate, good acidity with a dry finish. Long and persistent finish. Contains sulfites.
