Wild Snow Dog is a Premium Gin distilled from the berries of the wild Juniper that vegetates in the highest mountain of mainland Portugal - Serra da Estrela - and of nine other selected botanists. The purity of the air and the pure crystalline waters that feed the roots and berries of this Juniper Serrano give an extra quality to this superb Gin of complex body and unique flavor. Serrano juniper, lemon peel, coriander root, kumquat, cassia, cinnamon, angelica root, almond, rose and nutmeg are the botanicals included in the distillation.

Kompassus Blanc de Noir White
Balanced maturation, with a harvest of 3 passages. Fermentation with temperature control at 14ºC. Grapes transported in 15 kg perforated boxes. Light pressing with dry ice cooling. Stainless steel fermentation. Stage on lees for about 3 years. Dégorgement without added sugar - Brut Nature. Excellent aromatic presence, with hazelnut notes, and others that resemble toasted bread, baked apple. Unctuous in the mouth, with a very fine bubble, in a set with a very dry profile but very elegant, sophisticated, long, full of flavour. Delicious. Contains sulfites.
Kompassus Alvarinho White
Pre-fermentative maceration in a controlled environment. Total fermentation and 7 months aging in used 400 liter barrels. It is the only Alvarinho da Bairrada, and reveals a great aromatic purity. Delicate and elegant, with orange and light smoky mineral notes. In flavor it is rich and vibrant with hints of spice, slight bitter, a wine with a very long finish. Contains Sulfites.

Galliano
30 herbs and spices are used in the distillation of this famous Italian liqueur with predominant flavor of fresh anise and herbs. Best known simply for Galliano, it was created in 1896 by the Italian distiller and Arturo Vaccari of Livorno, Tuscany, and named after Giuseppe Galliano, an Italian hero of the Italo-Ethiopian First War. Galliano has a large number of natural ingredients including vanilla, star anise, Mediterranean anise, ginger, citrus, juniper and lavender.
Flor de São José Reserva White
Grapes harvested by grape varieties and plots in boxes of 20 kg and placed in the cold at 5-6º C. After being fully destemmed they are crushed. The must was subtly pressed and decanted until it reached the necessary clarity. Fermentation and subsequent full aging in 500 liter barrels, 60% new and 40% used. The lees were removed every month to keep them in suspension. After eight months, the final blend was made and the wine was pasted before being bottled. With a citrus color, the wine is initially very discreet and complex with mineral notes evolving later to some fresh and floral notes, more discreet and elegant. In the mouth it is fresh, with a present acidity and very balanced. Fine, complex and very elegant, it shows an excellent balance between alcohol, fruit and acidity, and a lively, fine and quite long finish. Contains Sulfites.

Degummed grapes, slightly crushed in a pneumatic press, the resulting wort being decanted into 2,500 liters stainless steel vats for 24 hours at 10 ° C and then passed into new and one-year French 225-liter oak barrels where it ferments during 25 days at controlled temperatures between 10 ° C and 14 ° C. Stage in these barrels for about 8 months, with battonage.

Total destemming, soft pneumatic pressing with alcoholic fermentation at 18ºC. Second bottle fermentation according to the traditional method. Aged for 48 months in the bottle. Straw yellow color. Fresh aroma with intensity. Of great elegance, with the presence of fruits such as green apples and pineapples. Balanced and delicate palate, with fresh flavors and notes of nuts and chocolate chip cookies. Contains sulfites.
Quinta do Ortigão Cuvée Bruto White
Total destemming, soft pressing, natural static decanting, alcoholic fermentation at 16ºC, sparkling wine by the classical method and degorgement a la volé. Crystalline appearance with gas release, fine and persistent bubble. Defined citrus color, fruity aroma, discreet in white pulp fruits but persistent, nuances of nuts and light toasted. Fruity and fresh flavor and at the end elegant and harmonious. Contains sulfites.
Envelope White
Made with grapes harvested from the old vines on the Ribeiro Santo property and on another plot, in São João de Lourosa, where the Dão runs, which calls the origin of this blend, made from the Encruzado variety. The must fermented under lees, then in 300L barrels and aged there, with battonage, for 6 months. After bottling, the wine was kept in the cellar for another 6 months. Clear and citrine color. Delicate aroma with notes of white fruit, aromatic herbs and a mineral profile. In the mouth tasting it shows complexity and freshness, with a refreshing minerality and citric acidity. Contain sulfites.
São Domingos Elpídio Superior Bruto White
This Sparkling wine remains in the basement for 48 long months at a constant temperature of 12ºC. Chardonnay shows refinement and freshness, the Arinto with exquisite acidity evidences the potential of the sandy-clay soil of Vinha das Andorinhas located in the Pedreira de Vilarinho. To obtain the structure and preservation potential indispensable to this exceptional Superior Sparkling Wine, only the juices of the whole grape core are used after separation of the first and last extraction. The grapes are left to ferment for the first time, turning the juice into wine base. The permanence in cuba allows the development of the complexity of the aromas and the structure of Sparkling Superior ELPÍDIO. The elegance and delicacy of the aroma suggest soft notes of white flesh fruits, remembering pear and apple, with slight citrus fruit and some toasted. The persistence and creaminess revealed by the long stage, wrapped in perfect freshness and mousse, contribute to a deep and sophisticated finish. Contains sulfites.
