After careful selection of the grapes and harvest at the ideal point of maturation, the base wine fermented in a stainless steel tank, with controlled temperature, after direct pressing. Aging on fine lees for 6 months with periodic batónnage. Second fermentation in bottle, by the classic method, followed by aging on lees and intermediate batônnages for 19 months, in the cellars of Convento da Cartuxa. Contains sulfites.
Cartuxa Colheita Bruto White
Base wine produced from grapes from the Arinto grape variety rigorously selected and harvested in the ideal maturation stage for the production of a sparkling wine base. Alcoholic fermentation in a stainless steel tank, with controlled temperature. Stage on fine sludge for 6 months, with periodic batônnage. Obtained by the classical method, in the cellars of the Monastery of Cartuxa. Dégorgement after period of 5 years of stage in bottle. Contains sulfites.
Soalheiro Bruto Rose
The grapes of Touriga Nacional (red grapes) and Alvarinho are produced in the municipality of Melgaço in vineyards with a balance between the sugars and the perfect acids for the elaboration of sparkling wine. The vineyards are implanted in soil of granite origin between 100 and 200 meters of altitude. Melgaço, the northernmost region of Portugal, is protected by a set of mountains that allow an exemplary marriage between rainfall, temperature and the number of hours of sunshine required for a slow and balanced maturation for the production of quality sparkling wine. The Touriga Nacional grapes characterized by the low color intensity in our region together with the Alvarinho grape variety are the basis of this very light Sparkling Soalheiro Brut Rose. The Touriga Nacional caste complements the Alvarinho variety by providing mouth structure giving elegance and persistence. The wort resulting from this selection ferments the temperature controlled, obtaining the base wine for sparkling wine. This wine suffers, already in bottle, a second fermentation. After this stage of fermentation and stage, degorgement is carried out, an operation that allows the elimination of the existing yeasts in the bottle and the replacement of the provisional metal capsule by the definitive stopper typical of the sparkling wine. Features pink salmon, thin, persistent bubble. The aroma is elegant and delicate. The taste is persistent and very deep with a pleasing complexity. Contains sulfites.

Esporão Private Selection Red
Esporão Private Selection Red: Syrah and Aragonez were fermented in small stainless steel mills, with alternating step-by-step with short manual overruns done 2-3 times per day, depending on our daily taste throughout the fermentation. We prefer to ferment the Alicante Bouschet in a small stainless steel tank and we did the reassemblies manually. The reason for this choice is that this caste has a relatively brittle film, which may lead to an exaggerated extraction of tannins. After pressing, we kept the wines separated, in order to better understand the evolution of each one. The malolactic fermentation took place in the barrels and spontaneously. 30% in new barrels and 70% in used barrels (1 year), of 225l French oak barrels (Taransaud; Saury; Boutes). After 18 months of internship, during which we only made a transfer immediately after the malolactic, we made the final lot, which was bottled on May 28, 2014, only with a slight filtration and without any type of bonding. In the nose predominates the black fruit with slight notes of smoke and spices. In the palate it shows density and richness, shows itself balanced, with good acidity and fine tannins. The ending is long and persistent. Contains Sulfites.

Created from the harmony of the varieties Touriga Nacional, Alfrocheiro and Tinta-Roriz produced and vinified in Quinta do Soito. It has a grená color with violet reflections, delicate aroma and complete with blackberry and blueberry notes allied to menthol nuances and fine spices. In the mouth it reveals an excellent balance: the flavor is velvety and intense, great, with the presence of rich and silky tannins. With a complex and harmonious structure, it reveals a unique minerality combined with a long finish. Serve at 16 - 18 ºC.

Júlio B. Bastos Alicante Bouschet Red
This wine is a tribute to my father, Julio Bastos. It is a wine that results from the selection of the best grapes from the old vineyards of Alicante Bouschet, which were trodden in marble wineries and vinified with controlled temperatures. The stage is made in new French oak barrels for 14 months. The wine has an opaque and violaceous ruby color, with pure aromas of china ink, liquorice, notes of wild and balsamic fruits. In the mouth it is very broad, dense and silky, with ripe and round tannins. Contains Sulfites.

After decantation, fermentation in stainless steel tank with controlled temperature. Second bottle fermentation (classic method) with minimum stage of 12 months. Citrus yellow color with attractive aroma and palate with good notes of sour apple and orange. Well structured end of the test, with the fruit expressive and always present, well balanced. Total destemming, fermentation with maceration in a press, with temperature control. Stage for 18 months in French oak barrels and 2 months in stage cellar. Red deep red color with intense purple highlights. Aroma rosemary and violet with notes of ripe fruit. Velvety and full palate. Complex and balanced end of test. Contains Sulfites.
Pedra Cancela Signatura White
Fermentation in French oak barrels at controlled temperature. Stage 12 months in French oak barrels with battonage and 2 months in stage cellar. Originating in one of the (few) old white vines in Dão, it is an opulent wine, with clear notes of barrel wrapping the fruit, very creamy and deep, elegant citrus fruit to prolong the final. To grow in bottle. Contains Sulfites.

Total destemming and pressing. Selection of the grape must and cooling at low temperatures. Fermentation only in stainless steel vats, with temperatures rounding the 16ºC for 3 weeks Traditional method of fermentation in-bottle, in a cool cellar, for 18 months, followed by the degorgement. Slightly salmon colour, aromatic with mineral notes, dried fruit and citrus. Good acidity, fine and delicate bubble and creaminess on the long finish. Goes well with all kinds of salads, white meat, sushi and grilled fish. Contain sulfites.

Produced from a single breed, Touriga Nacional. Of intense garnet color with notorious violaceous tones. Aroma intense and complex, the fruits of the forest, ripe red fruits and jelly are well known. It also has floral notes and notes of spices. In the mouth it is fruity, soft, well structured and with noticeable final persistence. Crushing with total destemming, prolonged and smooth skin maceration, alcoholic fermentation at 26ºC. 18 months in French oak barrels and 6 months in bottle. Contains Sulfites.

The color is typical deep ruby of the breed. On the nose a slight highlight of vegetable nuances that combine with fine notes of ripe fruit and typical tertiary notes of variety such as coffee and spices, offering a lot of complexity and intensity. In the mouth shows a profile that allows to be consumed while young, however, will certainly reward those who choose to evolutiom oin the bootle. Contains Sulfites.

The Sparkling Soalheiro Espumante Bruto Barrica ferments and stews in used oak barrels for 12 months before the second fermentation. This stage will give the sparkling wine a more evolutionary and intense aroma character, as well as a broader and more persistent good texture. The permanence in the basement, the low and constant temperature for 36 months allowed this sparkling wine to show all the elegance of the Alvarinho variety in a perspective of greater complexity and less fruit. The elaboration of a sparkling wine from the Alvarinho grape variety demands a careful selection of the grapes. Our tradition was based on the neutral fermentation in stainless steel to obtain the base wine with more fruit intensity. Soalheiro Bruto Barrica ferments and staggers in used oak barrels for 12 months before the second bottle fermentation. This stage will give the sparkling wine a more evolutionary and intense aroma character, as well as a broader and more persistent good texture. The permanence in the basement, the low temperature and constant for 36 months allowed this sparkling wine to show all the elegance of the Alvarinho grape variety in a perspective of greater complexity and less fruit to which the sparkling classic Soalheiro has accustomed us. It has an intense yellow color, a fine, persistent bubble. The aroma reveals tertiary and vanilla aroma, denoting a good balance between acidity and alcohol. The taste presents persistence, complexity, but at the same time elegance. Contains sulfites.
