The grapes were harvested in 25kg plastic boxes, hand-picked from berry to berry, destemmed and trampled on foot in traditional presses, fermented in presses for a week at a temperature of 26ºC. Malolactic fermentation took place in new French oak casks, where the wine aged for 18 months. Dark ruby color. Fresh notes of black fruits on the nose without over-ripening, all well matched and balanced with new wood, good volume in the mouth with a refreshing acidity to balance the concentration of the wine, the tannins are present but ripe. After gentle crushing with partial destemming, a very intense maceration was followed during the period of alcoholic fermentation, with which it was intended to obtain the highest possible extraction of the quality constituents in the films. This maceration is obtained through the steps of traditional granite winches, with controlled temperature at about 28ºC. During this phase not only a strict control of the fermentation temperatures, but also of the density was chosen, thus choosing the ideal moment for the addition of the neutral wine spirit necessary for the stop of fermentation. Very intense, of an almost opaque dark red . Aromatically very rich, the black fruit like plum, the balsamic aromas of resin and cedar, and some floral notes of the "subois", as well as spices such as cloves and nutmeg, stand out on the nose. Quinta de Lemos Jaen 2011 Red
These vineyards are located in the sub-region of Silgueiros at an altitude between 350 and 400 meters. This variety is recognized for having smooth leaves, a short distance between the knots and a bright green hue. The vine is grown within an integrated protection program: the use of herbicides is prohibited. Infestation control is achieved through soil movement. The grape harvest is made by hand, caste by caste, when the ideal point of maturation is reached, usually in the second half of September. The harvest is collected in small boxes of 10 kg. These wines are obtained after fermentation at a controlled temperature in order to preserve their aromatic elegance in large wooden barrels and stainless steel tanks for 20 days. The wine is produced by malolactic fermentation in French oak barrels and has a subsequent maturation period of 18 months to enhance its structure and complexity. Quinta de Lemos Jaen 2009 has a red fruit aroma, of great exuberance, slightly touch of raspberry, floral notes resinous of this variety, mint. The palate is very balanced, sensual and with a tasty finish.
