Quinta da Fonte Souto Alicante Bouschet Red

Fermentations are followed individually and temperatures and maceration movements are adjusted in order to maximize the potential of the grapes. A period of post-fermentation maceration is carried out to promote the extraction of tannins from the seeds — complementary to the tannins from the skins — in order to favor the structure and accentuate the aging potential. Wide aromatic expression: forest floor, bush, pine needles and discreet fennel notes, later giving way to black fruits (blackberry, blueberry), black plum and traces of licorice. In the mouth some chocolate, mushroom/truffle and hint of smoked, showing the good integration of the barrel. Monumental in the mouth, with several layers providing fascinating complexity. Refined tannins combine with good acidity (discreet, but present), enhancing the formidable structure. Eminently gastronomic wine with great potential for long aging.

Manual sorting is followed by destemming and gentle crushing, after which the grapes are transferred to a pneumatic press where they are pressed at low pressure in order to limit the extraction of color and phenolic compounds. Fermentation then takes place in stainless steel vats at low temperatures in order to preserve all the wine's aromatic expression. After alcoholic fermentation, the wines are sulphited to prevent malolactic fermentation from starting. Soft and attractive copper color. Expressive aromas of raspberry and strawberry ice cream with subtle hints of watermelon. Mineral freshness that offers an invigorating appeal. The release of Blend # 5 White Half Dry follows the growing popularity of White Port & Tonic as an aperitif. While most white Ports are made up of a blend of white grape varieties, Mistura Nº5 is made up of two Portuguese grape varieties, Malvasia Fina fresco and Moscatel Aromatic Galician. The final blend is half dry, deliberately designed to mix well with tonic and is also an excellent solo. Grapes are hand picked and cold fermented in small batches. Mix # 5 is bottled 3 months after harvest to preserve maximum freshness and should be consumed young and refrigerated after opening.

Fermentations are followed individually and temperatures and maceration movements are adjusted in order to maximize the potential of the grapes. Aging 50% of the batch aged for 6 months in third and fourth year 400L French oak barrels. The relatively fresh cycle of the year is reflected in the elegance and clarity of the aromas, which denote pine and eucalyptus and also notes of rose bush. It also reveals hints of raspberry and currant. In the mouth it is very fresh, with wild fruit flavors complemented by spicy notes from fine tannins, as well as cloves and nutmeg. Very pleasant right away, but it will improve a lot with another year or two of evolution in the bottle.

Attractive aromatic exuberance where notes of peach and white plum stand out, with more discreet hints of green apple and lemon, which reflects the importance of Arinto in the blend.
