The grapes are harvested into small boxes and received in the property’s cellar. Manual sorting is followed by destemming and gentle crushing, after which the grapes are transferred to fermentation vessels using a peristaltic pump. Fermentations are followed individually and temperatures and maceration movements are adjusted in order to maximize the potential of the grapes. Aging 50% of the batch aged for 6 months in third and fourth year 400L French oak barrels. The relatively fresh cycle of the year is reflected in the elegance and clarity of the aromas, which denote pine and eucalyptus and also notes of rose bush. It also reveals hints of raspberry and currant. In the mouth it is very fresh, with wild fruit flavors complemented by spicy notes from fine tannins, as well as cloves and nutmeg. Very pleasant right away, but it will improve a lot with another year or two of evolution in the bottle.
