The Soalheiro Granit reveals the more mineral side of the Alvarinho variety. The grapes, exclusively from the Alvarinho variety, are harvested manually in small capacity boxes and transported to the winery in a short time. After pressing, the decanted w decants for 48 hours, followed by fermentation in stainless steel tanks at a higher temperature than usual, using pre-selected yeasts for this purpose. Soalheiro Bruto Barrica ferments and staggers in used oak barrels for 12 months before the second bottle fermentation. This stage will give the sparkling wine a more evolutionary and intense aroma character, as well as a broader and more persistent good texture. The permanence in the basement, the low temperature and constant for 36 months allowed this sparkling wine to show all the elegance of the Alvarinho grape variety in a perspective of greater complexity and less fruit to which the sparkling classic Soalheiro has accustomed us.
